Chouchen is a mead brought into Brittany, France by Druids around 500 BC. This is my take on the recipe as I haven't been able to find a recipe for it or any videos online. Just one blog post by a gentleman who did things slightly different - I hop you enjoy this video, stay tuned for Part 2!

Wanted to pop in and say I really like your channel! Also if I were to guess the reason they fermented the apples first was because they probably used the natural yeasts from the apples, and thus the honey would be step fed in so the wild yeasts could be better prepared to ferment it

Thank youuuu!!! I appreciate your comment so much! Honestly, you're probably right! This was known to be high ABV, so it makes sense it would be a sack mead since wild yeasts can be totally unpredictable and tend to stick to the lower side.

I am definitely going to make this - I have a few meads I just started, so maybe after I've tasted a few and see what I like. But definitely going to make. Thanks for sharing this.

That is some sugary apple juice. I only at most found .055 SG juices. Definitely interested in trying this. It seems like a variation of a Cyser 🤔.

It is! It's almost time for me to rack and bottle this, I'm excited to try it. It smelled AMAZING during fermentation.

I have produced two different types of mead using apple and apple juice. They both turned out ok, it turned out awesome after aging. And I'm talking like a year or more.

Oh man, I don't know if I have that kind of patience! I can see why it could take so long though! Aging is great for mead :-p

Wait….what? I believe this would be considered a melomel. Never heard of this. Great investigation!

Haha, I think it's technically a cyser? Which is a melomel too hahaha, but Chouchen is just the French name for this particular mead. Not to make things confusing or anything :-p

I've made a spiCed mead with buCkwheat honey before, DeliCious! Definitely need to try THIS. Also need a new keyboard sinCe apparently the C key doesn't work on my keyboard anymore and I have to Cut and paste the C into all words with C. Very annoying. lol :D

LOL! I was wondering what was going on with your Cs! :-D I highly recommend trying this. I will be making a 5-6 gallon batch for my wedding soon! Am thinking of live-streaming it.
