I made ginger beer once, with fresh ginger. It's a traditional Christmas drink in Jamaica. I enjoyed making it so I will try some of your fermented drinks too. I discovered Amaretto in the United States. I always use it in chocolate recipes. They go together wonderfully.

In the hungarian language, the mead is "mézsör" , it means honey beer.😀

Hi Andrea. Thank you for all your videos, I really enjoy watching them. I've got some mead on the go, its bubbling nicely. I used champagne yeast, does that mean I need to put sugar in the bottles?

1054 FG is waaay too high. You can put anothe yeast and let it fermentate till 1025 at least and sack it for 6 months. You will cry on how good it will be anyway, very good content and the accent reminds my family, so nice both hehehe

I am in India and I also don't have star San here. I use plastic equipments too. I just put a batch of 10 L and washed everything with dishwashing liquid. I hope everything goes well.

i like your vids. maybe u can do homestay at your place for wine biznes.. may i know are the wines u made mostly sour? what should be the temperature to keep the bottled wine pls? usually i was told fermentation process need to be in dark places, yours is not.

😊 no it's suit. If you have a basement will be perfect ( more or less 10*C). Yes , the basement is dark 😉. But I haven't a basement 😢

If you don't have basement (like in my place), you can place the bottles in a closet. For zero chance of light, you can make covers exactly the size of bottles with velvet black clothes and cover up the bottles.

Yes 👍🏼 for sparkling wine you need the yeast for sparkling wine or for beer 😉

21*C is the best but you can do it at different temperature When the airlock stops bubbling the fermentation is done

Why didn't you put sugar in the bottle as you always do on completion of fermentation to making it sparkling, but why not with the honey mead? And please tell me what should i use as the substitute for hops in beer making to get the same taste. 😁 😁 Thanks.. 😁

I have a small batch of hydromel with pears and it's fifth day today how should I do it and for how long should i wait and sit it fermentation has become like it's stopped.

@@maheshlund3951 Bhai, sparkling wine ke liye koi alag se mehnat nhi karni hoti. Wine clear hone ke baad 1 chammach cheeni daal kar bottle seal kar do. Mera mead bilkul upar jaisa bana thha, itna clear. Mai 2-3 mahine wait kiya thha process complete hone ke liye.

Can I mix the dry yeast (ground into fine powder from Asian yeast balls) with pineapple wine yeast to make this or any wine? Or should I just stick to one type of yeast?

Thanks for thre advice! I started pasteurizing the must to 80 deg C and rapid cooling water bath with running water to room temp (2kg pure honey and 4 kg natural mineral water according to your 1:2 ratio), some raisins and lychee fruits with some of its syrup blended till smooth, a bit of green tea plus some sugar to increase the calculated SG to 1.104 for 6L total must volume. Will be priming finely ground 2 asian yeast balls (1 sweet, 1 strong) with another set of 100 ml pasteurized honey and water to same ratio 1:2 for 30 mins to 1 hr and I decided to include 1 TBS harvested natural Sweet Sapphire grape yeast to the must after adding the primed dry yeast (not using the pineapple wine yeast). Am not sure if I am using too much asian yeast (2 balls in total) for 6.1L total must volume (including the volume of priming for dry yeast).

if you have raw honey from a reputable source, you can try a wild ferment - here, the yeasts already in the honey itself will do the fermentation. Follow the steps outlined, just make sure not to heat your honey to much more than 45 degrees. It will be harder to dissolve. Alternately, what I did was use raw honey and freshly pressed apple juice from our own apples - note, here you should try to use untreated apples. Apples are a good source of yeasts. There are risks to wild ferments - make sure to check out online sources regarding this, as you are not fully in control of the microbiology that's going on in your fermentation. Any off flavours, weird coloured growths or similar and you will probably need to chuck the stuff. That said, it's how both mead and hard cider would traditionally have been made. Also, note it can take much longer for fermentation to start - it took my first batch a whole 5 days to kick off!

@@Sa1d1n I have used wild yeast method earlier but the result was disappointing. Risk of wine getting bad and low alcohol. I have got better results using bread yeast bought online for making pizza. You can get around 12% ABV. If you stir well daily, it won't develop yeasty aroma and clear up sooner.

Bilkul kadwa taste hota hai. Meetha kar doge, to piya nhi jayega. 1:2 ratio me honey aur paani se banao. 8-10 kismis kaat kar daalo. 1 chammach yeast ko paani me boil kar do. Ye dono bahut badhiya yeast nutrient ka kaam karta hai. Last me live yeast daalo. Bilkul strong mead banega jaisa video me hai.

@@Spectacular-cuoredicioccolato no 15 days. İ Just took out the balloon and tasted it, it tastes like red wine and smells like alcohol and wine. The last time I used 5 g yeast for 1 liter and it worked like a bomb now I'm using the same yeast for another bottle of honey water but it doesn't work

Then it's wine, not mead, and if you don't use anything to flavor it, that sounds more like just a bottle of watered-down ethanol.

No. You cannot. Honey is the essential ingredient of Mead. Hydromel is the French word for Mead. Fermented Honey.

You should never heat honey above 40 degrees as all the benefits of honey gets destroyed.
