Does an observer on earth practically ever see anything in their nadir ? would they have to be able to look through the earth ? so, is it used in theory only ?

Pretty much. The nadir as seen from Earth is whatever surface you’re standing on.

Is azimuth for the same star different when observed from different places on earth at the same time ?

Yes it is, as is the altitude as well. To make matters worse, the sky appears to be rotating to every star in the sky is changing their altitude and azimuth in real time.

@@LaunchPadAstronomy So when Alt-Az is specified, are the (lat,long,elevation) i.e. the geographical coord of the point of observation, and the time of observation also specified, to make them meaningful ?

Yes, if you’re trying to describe something as seen from a particular location at a particular moment. But if you’re trying to describe an object’s location in the sky regardless of viewer location and time, there’s another coordinate system we use called Equatorial Coordinates.
