We all know cured salmon, but why not with cod? Cod is an amazing fish to cure and it look stunning on your X-mas table! 'Massaged' with a rub of beetroot, wodka and spices. Served with a nice crunchy salad which contrasts with the pink hued cod. Enjoy and Happy Holidays!

Hi Bart, this looks really good! I am definitely going to try it! By the way, have you ever tried/made Norwegian fish cakes? They are traditionally made with an fine mince of white fish such as saithe (Norway pollock), haddock, pollock (Atlantic pollock) or cod. Mince skinless, boneless fish filets in a food processor until fine. Mix with milk, cream, salt, pepper, chives and just enough potato starch to keep it together. Form into patties and fry in a pan with butter. Serve with boiled potatoes and carrots. Or do as me, eat just as they are on their own. The best comfort food and it really brings out the lovely flavour of the fish! Merry Christmas from a Norwegian/Swedish fan :)

oh! when i saw curing, i thought it was going to take 3-4 days at least! 12-24 hrs is not long at all!

Awesome stuff Bart. Looks really nice and I'm definitely trying it out this weekend. 2 questions: 1. How fresh does the cod need to be to cure and eat essentially raw? I'd be totally ok doing this with Salmon but I'm a tad skeptic about the Cod. 2. Is it just the sugar that cures it? I didn't see you add any salt or lemon juice to the mix. Any particular reason why? Thanks man. :)

You should only use frozen cod, as freezing it kills all parasites. The best way to do this is to get some very fresh cod, freeze it until fully frozen, defrost, and use as normal. I've seen parasites in cod before, so I wouldn't eat it cured without freezing it first.

Hi Rohan, I notice someone already answered your questions. It is true that you need to use cod that was frozen before to kill all the bad stuff. Salmon is a different story. Enjoy!

You can skip that step if you want, but I felt like the it would be easier to purée this way.

I have never tried it but I think it will work, just add some water for the smoothness.

It is called kohlrabi. It is very similar to cabbage heart.

but i didn't see him put any salt in it. Maybe the lime is what cures it? Also, it could be because cod is not as robust as salmon?
