Wishing you all a very merry Christmas. It’s Boxing Day here and we are having leftovers for tea. We ditched the traditional dinner years ago in favour of clod cuts and salads. We had new potatoes slathered with butter, cooked with mint, instead of roast veges. Although it’s supposed to be summer here, we had a very muggy , and wet day, with thunder and lightning as an encore. We still managed to enjoy the day with the grandkids. Fiona, you put in so much work in behind the scenes in order for your family to have enjoyed that meal. I know, ( guess how ?) because the food doesn’t prepare and cook itself. I also know who laid the table and sorted all the decorations too. Enjoy your nap. Love from NZ.

Morning its boxing day now here in Ascot so yeah thankyou for letting us into your festive day with your family. I never let anyone in kitchen over years but this year had to let my husband help i lost my strength and cant stand for long, he was brilliant but he 6 ft fit like ruggby player he huge not fat as he fit but he filled our kitchen he knew it was do as your told was the only way he could help, i.cant get out of habit cooking loads just incase my family turned up? Was a lovely xmas dinner, i had cancer in the throat i struggle to eat but i manage i forgot pigs in blenkets wrapped in smoked bacon i react in windpipe the worst pain ever so i sat cried for 10 mi it passes does same if i eat rice does same something to do with starch in food. Potatoes nearly went to mash but i salvaged 11:42 enough and roasted the the mash was lovely.

We had a cook in the bag Lidl turkey crown, just for the two of us and our two canine girlies. We were pleasantly surprised, it’ll do for the next two days👍. I took my eyes off the sprouts and they ran out of water. We didn’t have sprouts today😂 I’ll try again tomorrow. I love you two ❤️🇬🇧

Years ago I landed on a recipe to cook turkey parts rather than a huge bird that takes hours and hours to roast. No over/underdone meat and turns out just right. it's easier to plan and prepare the side dishes as well. I find it makes more sense when cooking for a large crowd. Your feast looks wonderful, Fiona. Looked delicious! I'll tell anyone who will listen that the best way to cook the turkey is the Phil Vickery way. Been cooking it that way for years and will never go back! Incidentally, I removed the crisper plates from the Airfryer and put a little goose fat in the bottom. Absolutely THE BEST!

Fiona, use a roasting pan or electric roaster. Aluminum causes Alzheimer’s. I use an electric roaster and it’s almost set and forget. I baste a few times and have my oven free for sides. Lovely Christmas. Have a Happy New Year!

Glorious! That was so much fun to watch. I love the novelty presents on the table what a fun idea to open fun presents while eating. Fiona did a fantastic meal! I cooed the whole day, and with my new hip, I was so knacked. I did a herb and garlic butter and stuffed it under the chicken skin, and stuffed leek, garlic and herbs inside with some of the butter. Sides, stuffed crumbed capsicum, honey chilli parsnips, and new potatoes in herb butter with gravy. We shared it with our neighbor who was alone, her children ghost her. Appreciate your family and the love that surrounds you, everyone. It is a blessing.
