My favorite part is when Lazlo accidently blerts something out about James Bond. It's at that moment my favorite part is when Lazlo tells Chuck to cut the red wire but because Lazo said "cut the red wire Chuck", Chuck cuts the green wire

Just one Chuck moment is impossible for me... but I could narrow my top 100 down to five musts I guess... 1 - Chuck's speech and Sarah's reaction to the Break-Up (which set up why Chuck couldn't run away with Sarah), 2 - Chuck gifting his Mom's charm bracelet to Sarah, 3 - the devastating sadness felt at Shaw's killing of Chuck/Ellie's dad (Orion), 4 - the joyful happiness felt at Sarah's reunion with her Mom and Molly, and the ending... 5 - revealing the greatest soulmate love story in the history of TV... when even without her memories... Sarah's subconscious... got her to the exact spot on Malibu Beach... her curiosity... had Chuck tell, and her truly listen to their story... and Sarah's dear, dear heart... that requests Chuck kiss her life once more. On paper, 'Chuck,' should have only been a silly little sci-fi tinged, spy-action adventure parody, wrapped up by a pop-culture spoof, which at its core was an unlikely pairing love story... which quite humbly, it was... but somehow, this corny little spy show (my 2nd favorite TV series of all-time) turned into... pure magic!

So agree with a lot of your point 5. They may at first seem a mismatch but quickly you knew they were perfect for each other. They brought out the best in each other and they were each separately and together better for it. They saved each other not only in the spy world but from the world/lives in which they were lost in prior knowing and loving each other. For me this is the best show ever.
