My grandma made butter like this in a wooden butter churn. My mom often talks about it, and her moms chickens, and i know she misses watching her do this.

The staff type of churns are what you most often find in antique shops around here, though as the video notes, people started using the tabletop creamers as they became available. How the butter in Ireland is different than in the U.S. is the "souring" time before the cream is separated. This makes a good-tasting butter that is very different than the average butter in the U.S., and if you haven't tasted Irish (or other European) butter, give it a try. There are a handful of U.S. dairies that process butter the European way, but its just not as popular here. I find Irish butter a step above all others.

Well, glory be, I finally found a video where they know how to make real butter. In central Arkansas, in the 1950s everybody made butter that way. It tastes soooo much better than putting some cream in a jar and shaking it. ..And the REAL buttermilk was an added treat.

Thanks bud. That was so informative, in where I live we add the milk inside a leather bag or aluminum or wooden tank then shake it like when shake a blender bottle , but it dosent takes longer time for the milk to get fermented maybe cuz it is a bit warmer in where I live

Indians used rope and wood churn for 1000s of years attached to a strong pole in kitchen. The rope system speeded up process and reduced stress. Ladies would sit on small stool in front of pot sing songs and churn

Of course, the newspaper advert shown was of a cream separater to get the cream from the milk in the first place. Its the resulting cream that is then used in the churn to create butter. Cheers 🇬🇧

Reminds me of my dear cousin Elspeth back in 1776 when she'd make some of the tastiest butter ever. I'd bring in the buttermilk, cousin Jebediah would do all the heavy lifting, and we'd make a day of it. Such fun!

I think it's "buttermilk", as he said in the video. Irish people use it for the traditional soda bread, if I remember well. It was a popular drink here in Hungary, too. But now, not so. I've never drunk buttermilk in my life!

That buttermilk is quite excellent added to bread preparation as well as quick breads and pancakes. I have a very good recipe for pound cake that uses buttermilk.

If the milk was too cold or too hot or if there was thunder in the air the butter wouldnt form itwas also believed that if you had neglected to give a taste of the previous churning to the Little People you could churn it from morning to night but no butter would form. Of the four qouted reasons this last one was the most frequently blamed.

I do not quite understand. Do they just let fresh cow milk sit for 4-5 days at room temperature until it becomes sour? Doesn't it (the milk) spoil?

No it doesnt. The process is very similar to yogurt, in that they are using the lacto bacteria to make a good taste. Its hard to imagine how anybody decided to do this the first time, but it works. I think Wikipedia has an article on Making European style butter, or Making Irish butter. Theres alot more information worth reading about this subject.

@@sallymoen6371 From what I understand of yogurt, you inoculate a small culture of the yogurt into the milk and let it sit out. The milk doesn't spoil because the lacto bacteria from the yogurt out competes whatever other bacteria that might spoil the milk. But I don't understand the process in this video, because I don't think anything was added in it. Just plain curiosity here. Online search results usually link me to modern day butter making, but very little on how it was done (detail) in the past.

Butter is getting expensive ! I saw a video from cooking a chicken in 1800, and it sounds great you boil a whole chicken in butter and it sounds good, because the butter with soak all the way into the bones.
