Pectinase breaks down pectin which is a complex carbohydrate. It clouds cider because it diffuses light. Pectinase will help convert those pectin carbs into fermentable sugars which the yeast can eat and thus the cider comes out clearer.

Additives, why add additives? Traditional techniques with cider making used what was in and on the apples. I've just made 26 litres and is now fermenting nicely with nothing added or taken away. Organic all the way for me.
