@@theart8039 Well, fortunately it's just simmered as opposed to boiled. To counteract the lack of browning, what the Skyline brand of Cincinnati chili does at their factory is they use a lot of yeast in their (secret) recipe which adds that umami flavor that is missed out on from putting the meat directly in water. The reason for the direct-to-water method is to get a fine consistency; no way around it. Fun fact: "Cincinnati Chili" was originated by a Macedonian immigrant who opened a Greek restaurant and didn't have an English-equivalent translation for his meat sauce, so he just called it chili. Also, I'm only slightly disappointed that you didn't make a cheese coney.

And the cheese needs to be a finer shred too, and definitely pre-cut the spaghetti. I’ve tried this recipe...it’s pretty decent; kind of reminiscent of the old Chili Company in Lebanon (what we in Lebanon used to call “the chili hole”) and there’s another independent one down in Cincy somewhere but I forget the name of it. It’s nothing like Skyline or Goldstar though

Chef John-I’ve always been a huge fan but, as a lifelong Skyline aficionado, i am now a mega fan. This is pretty damn close to the real deal. One extra feature is to have 3, 4, or 5 way “inverted” with extra cheese-that means a layer of cheese both above and below. Regardless, you treated a sacred Cincinnati treasure with deepest care. Thank you. Bonus points for the Icky Woods reference.

Pretty legit, but nowhere near enough cheese. Rule of thumb: if you can still see chili or spaghetti, there's not enough cheese. And don't forget about coneys!

Note to Australian fans: American chili powder is very different from Australian chili powder. Aussie stuff is straight up dried chili and VERY hot. Using 1/4 cup of Aussie chili powder will create a meat sauce so hot that maybe three people on the planet will be able to eat it. However, it is easy to mix an American style chili powder - just give it a google. Usually has paprika, onion powder, garlic powder, etc. and is much milder. Or you can buy "Mexican Chili Powder" (ironic) which will run you around $3 or so just for this recipe as you will use the whole jar.

I have the same thing. It's not like I get mad from it, but I feel like, if someone is talking to me like that, he or she is not serious. And indeed, the questionmark behind every sentence makes it a little bit awkard. He goes from pitch high to the exact same low tone every sentence, and his sentences are short as if he is reading an autocue. What matters is the food, though and I forgive it. But to be honest I rather don't be as distracted on his way of speaking so I can focus on what he says and how he makes it. But to each their own. It is always better than complete monotone.

I'm from the Cincinnati area and this looks so amazing! I love my chili! The 5 way is spaghetti, chili, cheese, onions, and beans. @@elizabethroush8893 There is also Angilo's pizza in Norwood, Ohio that is amazing! I was raised on their steak hoagies which are amazing. Their pizzas are delicious as well. 4 way with onion is the way to go, as well as a Skyliner all the way. My sons love the 5 way and I do too, but I think the beans take away from the onion flavor, and I love onions. Take care.

I learned about Cincinnati chili in the 70s when I got married. I crave this stuff sometimes. Skyline Chili. Some folk just don't get it and won't eat it. You were just a hot dog and bun and mustard away from a cheese Coney! Yum. I also have the three way "inverted" with the cheese under the sauce so it melts. Excuse me, I'm drooling.

I always add a few squares of baker's dark chocolate to the chili. It makes the flavors deeper and richer and adds a bit of bitterness that works well with the cumin and allspice.

I’m from Cincinnati! As some other commenters have said, Cincinnati chili is really a Greek spaghetti sauce recipe. My dad is Greek and was really hesitant to try it because he didn’t like his mom’s version of this growing up! But seriously, Cincinnati chili is super popular. I’ve seen businessmen eating it downtown in their suits-Skyline Chili, the main chili chain, provides free bibs!

In Columbus it’s called a Frito pie or a "walking taco” where you just open a serving size bag of Fritos and put chili and cheese on it. Walk around fairs or whatever festivals going on eating it right out of the bag with a fork or spoon.

When I was 16, I worked at the original Gold Star Chili on Beechmont Ave in Mt Washington where the original commissary was located as well. Open til 4am on Fridays and Saturdays (saw many a drunken fight, mostly women) . I once got to see the "spice room " where the magic happens and I can tell you there is over 11 different types of cinnamon in the chili. No chocolate or cocoa as is often rumored. Anyone who grew up in that area was welcomed every morning by the smell of delicious chili hovering in the air. To this day it is still one of my favorite jobs I ever had.

Blue Ash Chili has a 6 way also. the extra option is either sliced jalapenos or fried bottle caps. Not sure what a fried bottle cap is, but it's probably pretty good. Blue Ash Chili used to have an awesome Chili Cheeseburger served on a pretzel bun but I think they took it off the menu. Big mistake...

My first encounter with a Cincinnati chili included the ingredient of 1 and 1/2 tablespoons of unsweetened cocoa powder (for one pound of meat). All other ingredients are similar, except for 15-oz tomato sauce vs tomato paste. I thought that the cocoa powder was part of ALL Cincinnati chili recipes. If you ever make it again, I suggest you try it with cocoa powder.

We always had it with oyster crackers, too. That little bit of crunch, with the warm, spicy meat, the edge of the raw onion, creamy cheese and starchy noodles... Heaven on a plat, but it definitely takes a long time to eat, lol. As a kid I would get impatient and just want to shovel it all into my mouth.

Also, You definitely need to top it with yellow mustard, oyster crackers and Tabasco. They also have the same thing except instead of spaghetti it’s a bean burrito. That is my husband’s favorite! I used to not like Cincinnati style chili, because I thought of it as chili. Then, about eight or ten years ago, it occurred to me while eating pastitsio at a Greek place here at home in St. Louis that Skyline/Cincy chili is really more like the meat sauce in that dish, rather that what I typically think of as 'chili'. It's weird, but from then on I actually started to enjoy Cincinnati chili, simply because I no longer compare it mentally to something it really isn't much like. Doesn't really make much sense, I suppose, but that's how it went for me. It definitely makes the absolute best chili dogs in the world, by the way.

@AJtheory - The best, easiest Chili Mac I've found is to make two boxes of Velveeta Shells & Cheese, and mix one regular can of Hormel into it. Toss a little minced yellow onion on top (and maybe a little super sharp grated cheddar); great for cold winter meals. (If you do one box/one can, all you taste is the chili.)

Texas chili and Cincinnati chili are two completely different things. Only the name is the same. Cincinnati "chili" is a meat sauce. While you could eat Cincinnati chili by itself in bowl that would be unusual. Texas chili is meant to be eaten that way. Cincinnati chili is a sauce and should go over spaghetti, or a hot dog, or something. I grew up in Cincinnati and lived many years in Texas and I love both "chili's".

Went to see the Reds play a few years ago when we were in town. Had the chance to get the usual hot dog and beer while there but someone had told us to look up the "Skyline Chili" vendor, so we did. Have to admit, it was one of the most unusual culinary experiences we have ever had, eating a bowl of this at a ball park, but trust me, it was well worth living through the strangeness. Meat chili piled atop a mountain of spaghetti noodles with grated cheddar cheese and hot sauce? To die for! We live in Upstate NY and we regularly make this dish at home as part of our regular rotation of meals. You MUST try this, either in Cincy or just wing it at home. Nots sure why it's called Skyline Chili, but whatever, it's delicious!

There's no chocolate in Skyline or Goldstar though. Their secret ingredient is MSG in Goldstar and dried yeast in Skyline, which is the same as adding MSG.

That is true as far North as Akron. There is a Skyline in Stow. Steubenville, Youngstown and Cleveland still don't accept this style of chili. Cornhole, however, is all the rage from the river to the lake.

Skyline Chili is the original Cincinnati Chili. A Greek family mixed the chili with spaghetti noodles AND the original location is on one of the seven hills of Cincinnati which is the Western hill which has a view of the skyline of Cincinnati. That’s how they got the name and their logo. They are the best. Also, yeast is in their recipe. It’s the 4th ingredient listed on their canned chili. And, make sure to boil the beef in water. That is how the texture of the beef gets so fine.

For the standard 3 way, it's the spagetti, chili, and cheese...though there are some places where they swap the cheese with onion. A 4 way adds either beans or onion, the 5 way adds both. There are a few places now that add a 6 and 7 way, with pickled, diced jalapenos and Bacon crumbles as the extra. If you want it as an "extreme" it's normally adding a spicier cheese than cheddar, at Skyline it's a habanero cheddar. All of them are normally served with oyster crackers with a hot sauce available if you want it. For ordering options, the skyway tends to cost a bit more, but it's adding another 50% of the cheese to it though Skyline periodically has it for free as a special. Extra cheese is another heap of cheese. Inverted puts the cheese under the chili. Semi-Inverted is half under and half on top (My way to order). Dry is normally taking time to drain some of the liquid from the chili, juicy is adding another bit of the liquid. Heavy spagetti is more spagetti and light is less of it. My order tends to be an extreme 5-Way, Juicy, Semi-Inverted, heavy spagetti, and an extra side of cheese as the regular cheddar...

A five way is beans. Oyster crackers are always served on the side, and are not included in the numbering system, lol. A local joint, Blue Ash Chili, was on Diners, Drive Ins and Dives and they made a 6 way which included fried jalapeño bottle caps. Perfect.

3 way is spaghetti, cheese and chili. Everything builds off the base 3 way. 4 way can be ordered two ways, 4 way bean and 4 way onion. Five way includes beans, onions and cheese. Crackers are served as an accompaniment to every order. You can also order a 3, 4 or 5 way juicy(wet) or dry. So you had it right for the most part.

(1) Yes, it was initially reduced too much. (2) You are missing cocoa powder from the spice mix. (3) the classic technique includes skimming off the fat... however, if you just use 90%+ lean then you don’t have to worry about it (that’s what I do). (4) I use a hand electric mixer to mince the beef in the stock pot. A potato masher is a good idea but to really give it a finely shredded texture, an old fashioned electric hand mixer is perfect.

The Cincinnati Enquirer posted a recipe containing chocolate in the early eighties that every mother in the city copied down. It was a mistaken guess and I'm sure Skyline and Goldstar were loving it. What you taste is MSG in Goldstar and dried yeast in Skyline, which is also MSG.

it depends on the cheese, with processed cheese you want plenty of it but if you're using an old fashioned sharp cheddar you'd use less since the flavors are much stronger since you're only getting cheese and not 30 different fillers and chemical agents in it. When I use Kraft brand cheese I use twice as much as if I were to use some fancy cheddar like Coastal brand or Kerrygold brand. Same goes for regular cheddar, sharp cheddar, and extra sharp; you'd use more regular cheddar then sharp or extra sharp. I'd use a small handful of extra sharp Coastal cheddar (maybe a 1/4 of a cup per bowl) but I'd use 1-2 large handfuls (maybe half a cup) if I were using Kraft.

It does depend on the cheese but for true, authentic Skyline, it's gotta be mild cheddar and it's got to be a mountain of it. I would also argue that it shouldn't be a fancy cheese, but something cheap like Kraft. But, since you're the Liza Minelli of your Cincinnati chili, enjoy how you like! 😊

For lunch today I literally had a grilled cheese with 2 parts tillamook cheddar (it's pretty cheap here) and 1 part Coastal extra sharp white cheddar

John, love your recipes ... I lived in Cincinnati for 30 years and love Skyline Chili. Anxious to try yours. That said, you need to get a grant and do a study on Cincinnati chili. It is truly part of the local culture. Twirling the spaghetti, is OK, but you are correct about not getting meat on the fork. There are several commercial varieties in Cincinnati and they basically vary on sauce thickness. It’s also important to have a “Cheese Coney” (or 2) on the side, for either an appetizer and/or desert. And as always ... Enjoy !

for my spices in this mix I was taught to also use shaved dark chocolate. to cook then let it sit overnight in the fridge. and to then skim the solid (cold) grease that floats to the top. Reheat and serve over the pasta or rice.
