this is my guess - he pretended to write the word and number at 5:03. At 5:31, when jaby told him the word , he used his thumb to write the word and number. Just look at the way he was holding the paper. His thumb was not visible while he was writing down the name and number. He did the trick from 5:31 to 5:54 in a time span of 25 seconds.
