Cinnamon cookies filled with bean paste (Gyepi-manju: 계피만주)

Today I'm going to show you a recipe I've been working on for a while: Gyepi-manju (계피만주), which are cinnamon cookies filled with bean paste. You can find these cookies at any Korean bakery these days, but when I was young these kinds of cookies were very special because there were not many bakeries in the city where I lived. If you want to speed it up, you can put the beans in a pressure cooker for about 15 minutes or so.. Let them rest for an hour and they should be good to peel. Quick like bunny!! hehe

I just made these cookies with both of my young kids helping me, and they're crazy about them. The whole time they were in the oven the kids were running from the kitchen and back to check how much time was left. My entire apartment smells fantastic, needless to say. Even the initially skeptical dad was impressed! This recipe was relatively easy and absolutely delicious, definitely worth the time spent making it. Thanks for another great recipe Maangchi!

I appreciate how the Korean culture turns a lot of pure, wholesome ingredients into sweet confections. For instance, the use of lima beans here and the use of beets in a previous jelly candy Maangchi had made. For those in the UK, I think lima beans are more usually called "Butter beans" in our supermarkets. As far as I'm aware, they are the same thing though! :) Will be trying this recipe soon!

I’m a bit confused because in my local Australian supermarkets you can find BOTH “Lima beans” and “butter beans”. The first are slightly larger, firmer and a little more flattened and have a thick skin. The butter beans are (as name implies) softer and smaller and more homogeneous (apparently no distinct separate skin). An internet search says they are the same species of bean, but are just harvested at different times and perhaps prepared differently. PS; I found a gardening site that says, “pole beans, lima beans and butterbeans are the same plant, Phaseolus vulgaris, only differing in plant form, pod size and pod length”. BUT I’m using *Lima beans* because they look just like Maangchi’s pictures.
