I find the best use for small batch yeasted breads is when trying out new recipes with expensive ingredients otherwise the time/effort/heating oven to make 8 or 12 rolls is about the same as making 2 (for me anyway). Add nuts, fruit, chocolate, cheese, anything that needs lots of peeling or prepping then small batches make a lot more sense. I guess there is one more advantage....It would limit me to eating only 2 cinnamon roles per day instead of 8 ;-). Small batch quick breads(muffins, cakes, cookies etc) go for it!

UPDATE; Success!! I’m new to baking but I wanted to try this so bad. They fell over when baking, lol, but were so fluffy and yummy! It was a bit cold today, so I added an extra 45 minutes of rest and proof time. I think that did the trick. Definitely baking this again and again…. Nice! I need more small batch recipes in my life. Cooking for two in this household.

From the time I started following Jeffrey of King Arthur baking techniques, my baking has reached a new level. Initially I was afraid of handling sticky dough with hands. But after watching Jeffrey, I play with the dough. I followed King Arthur cinnabun recipe. It was out of ghe world and that too it was vegan! I gave them to dozen people. They were all blown away that it didn't contain eggs or dairy and they said mine was better than the Cinnabon cinnamon rolls. I make 12 and freeze 8. When I need, I just take one out and put it in the MW for 30-40 seconds and its soft and yummy. I have tried many of King Arthur baking recipes and everything came out excellent. I can never cook in small batches. I always have some extra food incase some friends show up. My food never goes waste. But this video is good for those who want to learn baking without wasting food or those who want to bake in small batches.

Hello Kai, I enjoyed watching your small batch cinnamon rolls so much. I recently purchased the Broad and Taylor proof box and I am excited about trying it, and having better results with my yeast baking. I do live by myself and would like to know if you can start to make more videos of smaller batch yeast, recipes. Any rolls or bread or desserts you get to adapt to the smaller recipe. Would be amazing .I can try my new proof box and work on small batches to share with two or four people. I am not always invited out to a gathering or party and it would seem nice to have a few of these recipes and they probably will not take all day like my past experiences with yeast. Any recipes will be greatly appreciated.😊😊

Please give weights for all dry ingredients (and any liquids bigger than a teaspoon). It’s so much easier to add an ingredient, zero out the scale, add the next, etc.

The written recipe is confusing on the question of overnighting the shaped rolls. Are we to let the rolls rise before putting them in the fridge or after? The whole rising step seems to be skipped in the end notes if we want to make the dough for the next day, so which is it?

The rising happens in the fridge overnight. So, instead of covering the rolls and setting them at room-temp the day-of, the rolls proof slowly in the fridge over the night. Allowing the rolls to sit for 15min in the morning offers an additional rise-time and more so to warm up for a better bake. Hoping this helps! -🥐Lily

I'm not as familiar with converting air fried recipes, but I do know they behave like convection ovens. So I would advise you to decrease the temperature by 20 ish degrees, bake for the same amount of time but check to see if it may need longer. -🍰Grace

Thanks for baking with us, Tammy! 😄 To make it plant-based, substitute the milk and butter for plant-milk and plant-butter. We find that Miyoko and Earth Balance are best for butters, and any plant-based milk will do well. Making this whole-grain, the liquid in the recipe would be increased (I'd say from the 1/3 cup of milk to 1/2 cup); rise-time may take a little longer, as well. Small batch baking is great in theory but maybe not such a good use of natural resources. Be kind to mother nature. Consider adding on when already using your oven or perhaps consider a counter top oven that requires less energy than a traditional oven. I hope bakers don't use precious energy to bake two cinnamon rolls and nothing more, that would be very sad, i.e., selfish, indeed.
