Dear Ben, your cinnamon rolls are by far, the best out there, whereas I thought mine were best! Delicious, superb,...the middle butter/brown sugar melts and covers every piece of the dough, making the flavor extend throughout the whole roll, rather than just on top. And the dough is tender and stays that way the next day, if there is any left over. Bravo! Thanks so much for all your help.

@@pamelamatthews1373I just wrap about 4 or 6 rolls in foil, and put the packages in a zip bag. When ready to eat, warm the foil package in the oven @300 for about 10 mins.

I keep learning from your videos. Every one of them has helped me to be a better cook and baker. I still have a looooooong way to go, but at least I can make a loaf of sourdough bread that doesn't feel like a doorstop. This vid lead me to the buttermilk video and now I am going to always have buttermilk on hand. And that will lead me to having cheese, and whey and more deliciousness coming out of my kitchen. Making these tomorrow. As well as a boule of Sourdough bread. I come from a long line of bakers, butchers, and chefs. Worked in restaurants growing up as prep cook, after I learned how to cut veges, meat, and crack eggs on handed into 5 gallon buckets with no shells. Was encouraged not to be a chef. Went into Medical but still love to cook and love challenging recipes. Especially non-American food and wild mushrooms, and game/fowl. Getting ingredients is the most fun.

I literally used my starter out of my fridge without feeding it for a week, left the dough in my countertop for 12hrs and the next morning shaped and baked those delicious cinnamon rolls. Hi ben I’m from Australia I’ve been baking sourdough for about two years now and I understand how it works. About the the discard being bullshit I was thinking the same until you mentioned it. I did the the same thing as all the followers feeding it in morning and waiting for it to double before starting my recipe,it killed most of my day just to make some bread. Now in the morning starter straight out of the fridge make my recipe do the steps and wait for the rise,shape and in the fridge, next morning bake. The bread has gone to another level ,blisters ,huge ear ,amazing taste. Like you said just feed the starter when it lows.and the longer the starter in the fridge the better. You are a true baker with experience and know your stuff. Thanks

Cold kitchen and the butter was left out for over 20 hours. It was soft enough to fork. I really had to work at it to incorporate the sugar (sucanat instead of store-bought brown sugar). I couldn't really spread it on the dough (which was raring to go!) cuz it started to tear it. So, I left dollops as evenly spaced as I could. I just took them out of the oven and there is a beautiful soup of brown goo all over them! I made the icing with half date sugar and half powdered. Lovely treat! Slighlty sour but soft and delicious!

I think this video was produced great! My last loaf of sourdough was way too much trouble to make and it came out terrible. Looked pretty but was not good. I promptly put that starter in the fridge and forgot about it. You sir, have allowed me to dig my starter out of the fridge (3 months) and make a delicious loaf of sourdough bread. Came out perfect! Will be doing these and loaf bread next! You have given me hope for making bread!

I started my Lazy Person's Sourdough starter yesterday and I think these cinnamon rolls will be the first thing I make when it is ready to go!! They look sooooooo delicious! BTW, I couldn't find a way to keep my starter warm enough in my house and I had to make housecalls today, so I put it inside my insulated lunch box, padded it with towels to keep it from tipping over and put one of those "Hot Hands" packets inside with a thermometer. It stayed between 72 and 77 degrees all day. I just swished it versus stirring during the day.

Hey Ben Starr! Thanks for making this video and especially thanks for the scientific explanation behind the process of creating a healthy sourdough starter! After watching, i had the intuition to rinse my spoons in vinegar before mixing my starters to both clean my spoons from any dishwasher detergent, and to raise the acidicy of my starter. So far i had incredible results. Within 6 days i had a starter that almost tripled in size once i fed it to 100% hydration.

MY grandma used to leave milk in a jar lightly covered, or lid on it, for days, and used to make us pancakes with it!!!! She only used whole milk though, not any 2% or anything like that. Precious Oliver crossed the rainbow bridge in September, just before his 16th birthday. I am still devastated...I bawled myself to sleep last night, almost 2 months after we had to make that tough, tough decision. He was my best friend, my constant companion, the love of my life. What's great about this recipe is you can build off it. Make a spiced apple or pear filling or a cherry chocolate. So many ideas using the same recipe. Cheers 🤙

Ben! We're going to need a serious exercise regimen having made these delicious cinnamon buns today! When I first tried these buns soon after they were frosted , 30 minutes or so, I was missing the salt in the dough. But, when I came back later to wrap them up for the freezer, I took another taste, (couldn't help myself) and the flavor was PERFECT! Really! I guess it took a little time for all of the flavors to blend together from the caramelized sugar, soft pillowy bun, and the cream cheese frosting. I had been looking for a great recipe to use my sourdough starter discard. Wow what a surprise to come upon your recipe. I'm definitely checking out your other recipes and your sourdough starter maintenance videos.

Unsalted butter has less/no water content. That’s why it’s used for baking and cooking in general. If you want to use butter and oil together. Or alone for frying, you use unsalted . I’m have used lemon juice to full fat cows milk when the recipe calls for buttermilk . I mix it the night before and it is ready to use the next day. Never had an issue with it and always improves the flavour of my baked goods.

ALL butter, salted or unsalted, contains about 16-18% water...the same amount as salted butter. Butter does not vary in water content whether it is salted or unsalted, the water content only varies by brand. Adding ANY acid to a recipe will improve flavor. But adding lemon juice to milk does not make buttermilk. And the lemon juice does not need to be added to the milk at any point...they can both be added to the recipe separately. Yes...milk does thicken when lemon juice is added to it, but this doesn't affect the texture of the final recipe AT ALL. You can simply add your milk and the lemon juice to the recipe and you'll end up with the same thing. No need to mix the night before. The flavor will be DIFFERENT than if you had used buttermilk, which contains lactic acid, rather than the citric acid found in lemon juice.
