a recipe for Thotakura (Amaranth) Pachi mirchi curry!
Ingredients:
2 cups Thotakura (Amaranth) leaves, cleaned and chopped
1 onion, finely chopped
2-3 green chilies, finely chopped
1 tsp ginger garlic paste
1/2 tsp turmeric powder
Salt to taste
2 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
A pinch of asafoetida (hing) (Optional)
Instructions:
Heat oil in a pan and add mustard seeds. Once they start to splutter, add cumin seeds and asafoetida.
Add chopped onion and green chilies and sauté till onion turns translucent.
Add ginger garlic paste and sauté for a minute.
Add turmeric powder, and salt. Mix well.
Add chopped Thotakura (Amaranth) leaves and stir well.
Add some water and cover the pan with a lid. Let it cook for 10-15 minutes on medium flame.
Stir occasionally and cook till the leaves are cooked and the water is evaporated.
Thotakura (Amaranth) curry is ready to serve.
