Did you know there are hundreds of different variations of pesto? I make pesto myself at home once a week and I always try new combinations. For example, instead of using basil, you can use mint, and instead of using pine nuts you can use pistachio. I once came up with an incredible combination which consisted of sunflower seeds, sunflower oil and rosemary. It was divine. I also make pesto with pumpkin seeds instead of pine nuts and dried tomatoes or olives instead of herbs, it's so good. You can just try flavor combos and it's so simple to make at home, just get a mortar and pestle and buy the fresh ingredients

I had squid ink risotto in a cafe in Monterosso. It was served in an iron cauldron and was absolutely delicious. It tasted of the sea.

I'm a huge pesto fan too. Those fresh sandwiches looked amazing! If I could give some unsolicited feedback, it was a bit distracting with having to hold the mic right in front of your mouth, I think those mics that clip onto your shirt would be less distracting. Not criticism, just feedback. Love your content, keep up the fun adventures!
