Claire, your small kitchen, small refrigerator/ freezer, too many tools and not enough drawers, issues made my day. I mean, I wouldn't wish those on anybody, but since the vast majority of us struggle with these, it's nice to see that you can get professional results, in whatever kitchen you have. Also, I've been contemplating getting a cat. My very biggest issue is that they can jump. I have a girlfriend who has told me that you can keep them from doing that. I have yet to actually witness a cat not get on the counter. However, I've been told that it's impossible to prove a negative. So... Anyway, lovely video, keep up the good work!

What a beautiful episode! I've made hundreds of tartes Tatins in my life, and I always love watching other people make it. My technique is different from Claire's, but my emphasis is also on having the apples absorb the caramel and having a nice flaky pastry. I'm about to master rough-puff for my next Tatin. Julia always told us when she was teaching exactly why she was doing each step the way she was doing it. Claire is also a great teacher because she shares her thought process - including worries, mid-course corrections, and thinking on her feet - all the way through. Baking is magical. It's alchemy. But it's almost never a straightforward procedure, especially for the home baker.

"You're in control of the caramel." That was oddly inspiring.

See, if you're not in control of the caramel it's because you're willfully passing over control to the devil. We don't want that. And it's so easy to just keep an eye on it to make sure it doesn't burn.

I made this and it turned out SO delicious. I am glad I had this fool proof recipe from Dessert Person!

Really love these videos, Claire! As a semi-neurotic person, I always want to know WHY I'm doing the things i'm doing while baking. You make that clear to me in both your recipes and these videos without overwhelming me with facts.

Claire praying stuff will fit into/won't fall out of her jam-packed fridge/freezer is a recurring theme and it always makes me laugh.

If you added little posters or stickers of the animated characters to your online store I think they'd be a massive hit

If Claire ever did a "What's in my fridge?" episode, it would take at least an hour.

I made this yesterday for Christmas and it was a huge hit, thank you so much for the amazing recipe Claire! It took a while to prep the components but nothing was very difficult, and the results were better than I could've imagined. I highly recommend everyone try it sometime!

I love the opening, it feels like something Pendleton Ward or Rebecca Sugar had a hand in making. Big Puppy Cat/Adventure Time/Steven Universe energy.

Claire: “ Bad kitty!!” Also Claire with a muffled voice from snuggles: “But I can’t scold him because he’s the best” *Cuts to spraying counter with cleaner* If that’s not the life of a cat lover I don’t know what is

God, I absolutely love Claire Saffitz content. Claire has taken scary out of the equation for a few things that I’ve always wanted to try to make. Her explanations and seeing that even for her it doesn’t always go right the first time are honestly super inspiring and motivating.

I made this over a couple of days. My pastry was dry and I used Grand Marnier instead of Apple Brandy. I also ruined my first batch of caramel BUT despite those issue the tarte tatin came out so beautifully. I received lots of compliments and it was delicious. 10/10 would recommend and would definitely make again. Thank you Claire for the recipe and the helpful video to go along with it.
