Claire, the flavor of this apple pie was incredible! It will be my new go-to. It set just right, no soggy bottoms, and the sweet/tart/spice was well balanced and allowed the taste of apple to shine! I was also a big fan of the crumble topping :) such a versatile topping for future bakes. I rarely comment, but this was a gem of a recipe. Thanks!

I like to let the apples sit in the sugar coating and release some juices for 30 minutes then reduce the syrup to add an almost caramel like flavour before putting them into the shell. Also helps reduce the risk of a soggy crust :)

Made this right away! Just swapped vinegar with lemon juice. Also added some nutmeg and a little clove. The sweetness is spot-on. The crust, flaky as ever (ugh good pie takes a long time to cook). Crumble is always delightful on an apple pie. It is just the BEST way to make apple pie. I will never double crust again. This is so delicious. I ramp up my apple pie by adding cranberries - I like the tart contrast-, and a bit more spice (she is a bit low on the spice, in my opinion) I add cardamom, more cinnamon, allspice, ginger and then cover it with the crumble. I will try her pie crust. I don't think you can ever over spice the apples. That's me, though. Apples can take a lot as can cranberries. It just makes it more amazing. Seriously. I live on an orchard, with some of the original pippin tart apples from Johnny Appleseed (or John Chapman if you follow history), and you must use TART apples, like Granny Smith or pippins or other green apples. Don't go to sweet apples like Macintosh... (I would like her to comment about that). They aren't baking apples. Apples, like all fruits, caramelize in the oven, so you need to take that into account that they do that while baking, so they get sweeter in the oven.

Apple pie story: some years ago, I was alone in the house, making an apple pie. When it was ready and bubbly hot, I carefully pulled it out and turned around to put the pie on the cooling rack on the counter. My bro in law was on the other side, looking at my pie and commenting how good it smeled. He showed up out of nowhere. I almost dropped the pie! He pops up anytime I am making a pie. Regarding apple scraps : when making apple pie, I like to boil them in some water in order to extract as much pectin, sugar and flavour as possible. Once everything has completely collapsed, I strain and return the liquid to the rinsed out pan and simmer until think and viscous. I add the liquid to the sliced apples and slightly reduce the amount of corn starch I use. The filling is more more luscious and silky when I do that, and less stodgy or gloopy.
