Hello tried your recipe today! But my cupcakes were fluffy at the top and dense and gummy at the bottom after refrigerating in airtight container 🥺 are these supposed to be kept at room temperature?

Is it not baked enough? Mine 1 won't dense and gummy even keep overnight in the refrigerator ya.
For the baking time, can I use 180 degrees for 15 minutes?

Noo although it may seem reasonable because everything is adjusted, it still won't cook through evenly and properly. 180 might burn it and 15 minutes it won't cook through

是指表面裂开吗?一般裂开是因为温度太高,可以调低温度,拉长烘烤时间~

Clara Baking 克拉拉烘焙 沒有裂開喔 就是皮是皺皺的 也沒有沉下去 就是剛剛烘出來是美美的 過後就不美了.

Hi, can I substitute cake flour with self raising flour? If yes, is there anything else i need to add for the substitution? 😊

Usually, self-raising flour has baking powder but cake flour not, unfortunately, I never use self-raising flour with this recipe, so unable advise further.

You can use any flour on hand, it will just change the texture of the baked product. The 3 main types of flours are: bread flour (with the highest gluten content@~12-14% -usually used for bread, as the name implies, or Neapolitan pizza dough); all purpose flour (medium gluten content@~9-12% -used frequently for most baked goods); and cake flour (with the lowest gluten content @~7.5-9% -used when soft and delicate texture is desired). The higher the gluten content, the more chewy your baked goods will be, so if you're looking to bake up soft and spongy cupcakes, as called for in this recipe, it is probably best to use cake flour. Another thing about self-rising flour, which uses all-purpose flour, is that it is incorporated with baking powder (a leavening agent) and salt, which will change the texture and flavor of the cupcake.
