In this video I show you how to make an easy carrot cake with cream cheese frosting. This carrot cake is great for Autumn/winter seasons and is packed full of flavour.
Ingredients:
4 Large Eggs
275ml Sunflower Oil
200g Light Muscovado Sugar
90g Dark Brown Sugar
Zest of ½ Orange
1 Tsp Vanilla Extract
5 Tbsp Buttermilk
250g Finely Grated Carrots
140g Mixed Fruit Mix
60g Chopped Walnuts - Extra for garnishing
1 Tbsp Mixed Spice
¾ Tsp Cinnamon
¼ Tsp Green Cardamom Powder
½ Tsp Bicarbonate of Soda
1 Tsp Baking Powder
285g Self Raising Flour
Cream Cheese Frosting:
200g Softened Butter (Salted)
200g Soft Cream Cheese (Full Fat)
380g Icing Sugar (Adjust to taste)
½ Tsp Vanilla Extract
