Escarole in soup is the best! Love your recipe. I often roast the meats first then put it all in the soup. Very very deep flavor! 👍🏼

You were lucky not to have lost your sense of taste while having COVID. I had COVID and I wanted some chicken soup so bad. When my daughter brought me some chicken noodle soup it was horrible! The broth tasted like dishwater and the noodles tasted like wallpaper paste. I could have cried.

I like to used the large ball shaped "cuscus" in my soup. Its my pasta sddition to the soup. Although this is the first time ive heard of using barley in the soup. I might try that because i really like barley. Soaking it overnight really helps make it tender when you cook it.

What I love about Italian cooking is that nothing is wasted. In France, they would discard the stock vegetables. In Italy, they are used. Because people didn't always have food to throw away. And the zuppa still has deeper flavor.

Lidia, I don’t like to eat whatever it is that I’m cooking right after it’s done. I let it sit on the range top for at least an hour or two to let the flavors blend. Soups and stews taste better the next day, right? Of course I don’t do that with stir fries. Stir fried have to be on the table right after they’re cooked. Thank you Lidia. I love pasta and I love your pasta dishes. Unfortunately I should avoid eating carbs and gluten for health reasons but I indulge myself once in a while. I’m a naughty girl… 😂

Ciao Lidia, questo piatto in italiano si chiama "minestra maritata", che sarebbe in inglese "married soup". Il titolo del video: wedding soup, tradotto in italiano è : minestra per matrimonio. In Italia, non si serve nei banchetti matrimoniali.

In the US, we recognize it as Italian Wedding Soup. Yes, it's probably a mistranslation, but this is what we recognize here.
