The food looks absolutely delicious! You have such a soothing voice, too, and explain the process so effectively! I appreciate the good audio and video quality, too; murky video or muddled audio makes it so hard to enjoy a video like this, but you really have put in your due diligence on the production side of these videos. I'm going to try to make Spanish eggs of my own sometime! Thank you!

This is a good example of what I like about your videos - a recipe that one can make verbatim; or, a recipe that can be used to launch into a number of variations. In this case, I can easily see making a batch of the sauce for the refrigerator and using it over several mornings for a variety of applications. I'm thinking that I may make this like you did, but also include diced potatoes to add just a bit more texture to the dish. This looks very good.

That's shakshuka except with that the eggs are poached in the tomatoes rather than fried. As shakshuka is a Middle East dish I wonder if the Moors brought it to Spain or adopted a Spanish dish and spread it into the Middle East.
