The food looks absolutely delicious! You have such a soothing voice, too, and explain the process so effectively! I appreciate the good audio and video quality, too; murky video or muddled audio makes it so hard to enjoy a video like this, but you really have put in your due diligence on the production side of these videos. This is a good example of what I like about your videos - a recipe that one can make verbatim; or, a recipe that can be used to launch into a number of variations. In this case, I can easily see making a batch of the sauce for the refrigerator and using it over several mornings for a variety of applications. I'm thinking that I may make this like you did, but also include diced potatoes to add just a bit more texture to the dish. This looks very good.

In Turkey we make the same tomato sauce and break the eggs into it. Then mix it , cook for 1 or 2 minutes more and it's called 'menemen'

That's shakshuka except with that the eggs are poached in the tomatoes rather than fried. As shakshuka is a Middle East dish I wonder if the Moors brought it to Spain or adopted a Spanish dish and spread it into the Middle East.
