I am italian, you said mascarpone in a very lovely way! Your recipe is very similar to the original one, you just missed to add the white eggs!! In Italy we like to use the white eggs to make a meringue cream and add it to the egg yolks and mascarpone instead of using heavy cream! It is a way to make the cream fluffier without adding other fat and to not throw away the white, waisting food is not allowed for italians, lol!

Le varianti sono tante, ma se monti bene gli albumi a parte con metà dello zucchero, e poi gli aggiungi pian piano ai tuorli e mascarpone, senza smontarli, rendono la crema più spumosa e non liquida. Ottieni la stessa texture di quando aggiungi la panna montata, ma evitando di aggiungere altri grassi (gli albumi sono completamente senza grassi) e si aggiunge anche un bel retrogusto di meringa - che io preferisco. Ma ripeto, le varianti sono tante e tutte buone!

@@willowtree9084 thanks for this comment, really! I want to make tiramisu and would love to use the egg whites, not just to reduce waste but also bc my mom has digestive problems and can't eat food that's too fatty. I'll try doing it like that!

I, too, always use the egg whites, because it makes the cream so much more mousse like. Franny, if you reserve half of the sugar from the yolks, and stabilise the egg whites by beating it into the egg whites, until you have a stiff peak meringue, they won’t deflate and liquify when they hit the fat in the mascarpone cream. Hey Nick! Im not sure if you've seen it before but there's a local bakery in my country that sells tiramisu with chocolate shavings and crispy chocolate balls in between the layers. Which adds so much texture and extra flavour to the tiramisu 🥰😍 my favourite!! Your recipe looks amazing btw, makes me wanna get a tiramisu now 😭

I like to use tia maria or Khalua, but rum, Marsala and some people use amaretto (I personally don’t like the addition of the bitter almond flavour of amaretto ) even grappa!

Tatiana, if you can’t find mascarpone, but can get pure cream (that is, without gelatin like thickened cream) you can make it easily You just need the cream, a thermometer and some tartaric acid or cream of tartar. I would happily talk you through it but watching is much easier and there are many you tubers that do a wonderful job! Once you have made it yourself (except that you need to do it the day before you make the tiramisu) you will never want to buy it again, so easy, and so madly delicious!

I have to resub every few months and I'm getting pissed. I've been watching you for so long. Yet, KZbin recommends things I have no interest in and have never searched. My brother has lived in Rome for the last 32 years Every Christmas when he returns home to far far away Australia, he says I make the best tiramisu I make my own mascarpone and savioardi and as an Italian family that migrated to Australia, I think it’s very unfair to say we Italians, wherever we may live, or how far we are, are incapable of making our traditional foods. Granted the produce may taste different, as it does all over Italy as well. We can be proud of our foods but it is never necessary to be this rude. If you have something to teach, teach us! This negativity is not becoming to you and goes against everything I am and know of being Italian. We are proud, but proudly teach, not trash other’s efforts.
