I think also I will assemble this nicoise undressed also for the boy. He seems to like fish so far and enjoys eggs and SOME vegetables. 🥰

Since you want more of them, how about a healthier Cobb salad with a vinaigrette (red wine holds up nicely) vs some heavy dressing, "coconut bacon" (look this up, it's good, but I think of it more as a smoky element). I change up the cheese---feta is nice.

I found myself with a small package of fingerling potatoes in need of cooking, so I decided to gather the ingredients to make a non tuna version (I prefer poached salmon but that's too costly). I ate the salad last evening and will finish the leftover potatoes on Saturday afternoon.

Sounds great! I agree, salmon is pretty pricey but a great cost-effective alternative are white beans in this salad too!

A favorite!! Since I normally cook for myself (or maybe one other friend). I kind of prefer to "arrange" the plate mixed. Also thinking of trying next time with canned salmon, a fish I'm wanting to eat more of (versus tuna). Thanks for the tip on peeling eggs, also dressing each thing separately--started doing with potatoes. This is really a great salad and has everything you'd want in there.

Hi Kathleen! Thanks for chiming in. I use fresh tuna too but I thought it would be a little more accessible if I demoed it with canned tuna, and frankly the canned tuna I can get here is incredible so it’s an easy pantry option ot always have on hand! Cheers, Caroline
