Cleaning a badly burned wok could be a lot of work and immense frustration. No matter how well a wok is seasoned, food ingredients could become stuck and burned to the surface of a wok with a natural surface, whether it is carbon steel, cast iron, light cast iron, or stainless steel. Cleaning a burned wok could take hours by scrubbing it in the sink. A better method is to use a modification of my spot cleaning method that I normally use during cooking. With this method, a small amount of water is deposited onto the surface of the wok while it is being heated. The high temperature of the wok turns water into steam, which is an effective cleaning agent to soften the burned materials. With gentle scraping, the wok spatula can easily detach the burned materials. In less than a few minutes, all the burned materials are removed. You should keep this method in your repertoire for cleaning and maintaining your wok.
