Why do bikers rev bomb instead of using the horn? No one is trained to know what that means. In fact we're trained to ignore bikers revving the engine because 99% of the time it's not to prevent an accident.

It's because all motorcycle horns are useless. Even when they were alone in a residential neighborhood, their beep--beeps at the end of the video were so quiet. Now imagine you're in a car with all the windows up, music playing, ac running. You'll barely hear the horns, even if they just laid it on you. But the revs, you'll at least hear. Either way, most of the time, it's better for the biker to just ride defensively, get out of danger, and just keep on riding.
