Just by watching her videos, I've noticed how unsanitary things are. Look at the attachments of the mixer for example. The crud around the edges of things & on the handheld mixer itself. Tip for separating eggs that I learned from my mom is to use your hands, letting the whites drip through your fingers into a bowl below while cradling the egg yolk in your fingers. This should lessen the chance of the egg yolk from breaking.

It’s amazing how egg whites can go from a transparent goo to fluffy white clouds with just a beater Also, life hack to separate yolks - break your egg, then take an upside down disposable water bottle, squeeze a little, and press against the yolk. Release, and it’ll suck the yolk right up!
