you should have watched YT videos on korean bbq. the seasoning isn't for seasoning the meat. It's to dip the meat into after it's cooked. you need to cut the pork into pieces when it's somewhat done so it cooks all the way through

I'm not gonna lie, as a Korean this was painful 😅 but as others mentioned, workers usually assist in grilling especially if they notice you're having trouble, some even teaching tourists how to eat. I hope that you were able to experience K-BBQ again as how it should've been somewhere else before you left.
