Ox tails are like brisket used to be frowned upon by the upper crust chefts, but they're now considered to be delicacy in most High end restaurants. They were once considered servant/poor people's food . Poor people didn't waste any part of a butched animal necks,tails, and tough chest meat were used effectively by their cooks,the brisket is the best meat to barbecue on cattle, the tail if properly fixed is delicious, I've never aquired the taste for necks,but I'm sure that alot of people would enjoy it if they tried it.

In Korea you are rich if you can afford oxtail. It's not just poor people. Many cultures like those of Indigenous, European, Asian, and African people use the entire animal. In North America people just want the pretty part, but by not eating other parts like organs and bones they miss out on essential nutrients and minerals. You might enjoy some of Bourdain episodes in Montreal where they embrace those parts.

That part toward the end when Anthony adds a bit of olive oil to the pasta, I felt that (although I like plating it, then adding a little oil on top).

According to the times on the clock when they were browning the meat and when he was dressing the pasta, the sauce cooked for less than 15 minutes. I hope the final sauce also had some TV magic involved

San Marzano tomatoes, of course - this is a very simple and basic traditional "gravy" recipe - easy to do

Yeah well I am a 56 year old Italian-American man from Bergen County, New Jersey and whenever my late mother Carole or my late grandmother Francesca cooked a big pot of SAUCE as opposed to gravy🤣on Sundays it usually contained meatballs, sausage, braciole, pigskin and pork neckbones and let's see how many fucking seconds it takes for this comment to get deleted like pretty much every other one I post on here, folks. Is it sauce or gravy in Italy? “For Italian Americans to use the word gravy for tomato sauce might have come from the idea of belonging,” he said. ... Perhaps the immigrants thought that if they called their salsa, their sugo, their ragu by the term gravy, it would make their food-and maybe themselves-more palatable to American tastes.
