Steve...I LOVE your comment on not teaching a recipe, but rather a technique. Because YOU are a teacher! It's like giving a person a fish or teaching HOW to fish. The latter lasts a lifetime. As for Dennis's comment on going back to basics, Julia Child's How to Cook cookbook is a fabulous guide to techniques. I imagine libraries carry it (it's a pricey book). Thanks for bringing Dennis on; I can't wait to see his next cooking video, Keto or otherwise.

Miss you Dennis, your recipes always work. I can live without the cinematic story if it means it gets you back. I like the macro balance approach to the recipe because most only focus on the carbs

I lost 50 pounds when I worked on doing Keto correctly, and then it stopped, so a year later I stopped worrying about it. I've been heavy all my life, decided I can be healthy, even if I'm overweight according to others, so I'm limiting, but not strictly adhering to anything on a permanent basis. I hear you when you mention all the ingredients needed to make things like Keto bread etc. I think that's one reason people like Keto Twins because they are creating good food with 2 or 3 ingredients. Excellent discussion, thanks for taking the time to make this video.

Great episode! Always will love and respect Dennis because his videos are so entertaining. I don’t even mind he’s not doing “keto” videos because those of us with family members who aren’t keto still need to eat and I’m someone who believes in spoiling my family every now and then. I’ve actually made his pasteles de guayaba y queso for my parents and they absolutely adored them. It sounds like he prefers the “low carb” approach and tag over keto but, a lot of people with experience know there’s a lot of overlap there. Who cares what it’s called if you’re achieving the results you’re after? You got to do what’s best for you and the only way you’ll know for sure is to change it up. Anyway, hope he finds his groove again. I’ve missed getting alerts for new videos. Thanks as always, Steve. I really enjoy these co-podcast/interviews.

I love both of y’all and get lots of inspiration. I do a really low-carb version of the Weston A Price/Nourishing Traditions way of eating (not classic keto although I am pretty fat adapted). I love how each of you approaches food in an open minded way, and I get lots of ideas from you on how to make the foods I think are good for my body tastier. Techniques are translatable in any cooking/eating style. I’m no vegan, but Heavenly Fan is a great teacher too. Please, regardless of the keto patrollers, the trolls, and the haters, lots of us are grateful for the content you create. ❤

I totally respect Dennis making a change for what’s best for him. If fruit can be part of his diet that’s a good thing. Unfortunately, I struggle with horrible sugar addiction. It’s not the Apple. It’s what the Apple causes me to do after I eat it. It really is a personal journey for everyone.

Nice to see you, Dennis. I think it’s ideal to find a balance between strict, boring keto and a whole food, home made way of life. Low carb is a much better way to put it. There will never be a wonderful keto sourdough, the perfect keto pasta, or an actual substitute for potatoes. I treat those things as very rare treats and basically just follow the “don’t eat fake foods and white foods (sugar, flour, potatoes, rice). I eat all the vegetables! It works really well for me and I feel great.

Dr. Atkins had the best advice about eating. He said that you should eat enough so that you are satisfied, but not stuffed. He also advised eating if you are hungry, but not if you aren't hungry. Sounds simple, but it keeps me from eating just because a certain amount of time has passed since my last meal. If I'm not hungry I wait to eat until I am.

I started a training program in January that also included a meal plan. I was nervous dipping my toe back into the world of carbs, but with some guidance on portion and whole foods.. it worked really well. I'm still mostly protein focused with low sugars, so keto content is still my preferred recipe and food testing videos. Sounds like a good outlook for BTK. I find your videos very enjoyable, and I liked the Christmas recipes too. Very talented and entertaining :)

This was a good one. Appreciate the honesty here too. In the end you’ve got to do you and if you don’t want to be by the book keto I think that’s fine. I just don’t like when folks feel relieved or get the “I told you so” mentality when someone says they aren’t keto anymore. Love that this type of conversation can exist these days and this didn’t turn into what it could have. Thanks to you both!

My 'artisanal' bread now is flaxseed and psyllium husk powder bread! Few ingredients done in an hour with added fiber 'benefits'. I like toast at breakfast with my coffee. Inexpensive and no glucose spike.

I honestly think a better "niche" for him would be creating training videos on how to make entertaining and cinematic KZbin videos, including video editing, staging shots, camera techniques, story boarding, etc.

It makes me sad to see so many people going off keto. I also unsubscribe to him because of that as my only interest is in keto and how to create better tasting keto food. However, everybody is an individual and has their own choice to make. I hope that his health on whatever he does gets better. it's hard for me to believe that his health wasn't where it should have been on keto but you know, like I said we all are individuals, we all have different metabolisms and things like that. I hope Steve that you never go away from keto but if you do that's just the way of things and I will always wish you the best. good podcast!

My ShopRite here in PA had thighs and legs for 69cents a pound!!!!! This was interesting. I really liked Black Tie’s videos. I like your videos a lot! Please don’t get burned out! Just don’t try to do too much!

did you know that Dr Berry & Nisha agree with you? they do full seminars focused on the idea of creating a "proper human diet" that works for you! to find the version that is sustainable long term specifically for you, which will be different for the person next to you, so don't let anyone tell you "how to keto".

Dennis' comment presenting keto as a diet that omits an entire food group really caught my attention ... it made me wonder if the majority of Florida keto people are carnivores? as that is the only version of keto I can think of that omits all carbs. every other version of keto I've come across actually includes carbs, but has their own list of which ones they will include or exclude for the different subsets of carbs such as grains/gluten, root veggies, non-root veggies, leafy greens, and fruits. I've personally eaten more veggies (non-root + leafy greens) in the past 4 years on keto than the rest of my life put together!😂 And I eat multiple fruit options every single day! Lemons, limes, berries of many varieties, avocados, tomatoes, olives, coconut, almonds, cashews, and more (look up "drupes" which is one subset of fruits). Anyways, the conversation just got me pondering how geographically based keto tribalism (meant in a positive and supportive community context) may shape how people come to personally define keto in different areas... since someone in Florida seems to have a very different definition than someone in Alberta. Similarly, a video where the presenter in southern states making chips and guac claimed that both chips and the guac wouldn't be complete without black pepper... which sounded foreign to me in Canada where I've never heard of black pepper on either! Fascinating how geography can affect our perceptions of something and how changes to a recipe or other idea can develop as it travels around the world! If you are Mexican, can you confirm if black pepper is traditional? if yes, then maybe it got lost on the way to Canada? if not, then maybe the Americans added it in? anyways, just fun food for thought...

Since I started this Keto journey around the start of the pandemic, I've lost half a human in weight, but I'm not strict Keto. I'm more South Beach..heavy protein, fresh veg, little processed sugar. I don't do pasta, rice, or potatoes. No candy. I do Keto breads and tortillas, but don't go crazy. I think the bottom line in keeping your diet healthy is staying away from sugars and keeping anything wheat based to a limit. JMO, and has worked for me. I can say that, after 3 years of doing this diet, if I have a night of cheat, I feel like dogshit....the inflammation is real.

You're so right. My husband and I just turned 50 and had a non-keto cheat last Friday and that evening my knees felt like they were on fire! I honestly have never felt that type of inflammation come on THAT fast! Back on Keto and feeling better already.

Ended up having to put my diet on pause (still avoided full sugar drinks) not too long ago for a few days. By the end of day three, I felt nauseous, was constipated, and my joints still hurt despite being back on the wagon.

I think we should eat genetically/ancestrally - I'm of Norwegian heritage and I feel the absolute best when I eat fish, berries in small amounts (as you would in nature) and occasional carbs - usually a baked potato. Beef and ruminants seem too heavy and calorie dense for me. I can eat unlimited salad greens but can't tolerate milk. By the way, it's likely that people become lactose intolerant after simply not eating milk products for a period of several weeks - in essence weaning themselves. The enzyme to digest lactose stops being produced in the intestines after a few weeks without it. That's why Asians are lactose intolerant - their diet doesn't typically contain milk products after they're past the infant stage. I would love it if Dennis came back once in a while with the 'Godfather' Italian series of vignettes. They were the best!

Steve, love the direction you are taking. I've never been one to follow a recipe but rather adapt it to my taste...or even what I have on hand. I actually get annoyed by exact measurements of things like spices.....how do you know how much oregano I like (or if I like it at all) for example.

Steve is hard core home cook, I’m too but not like him by quite a bit. In my experience during my 65 yo life and more than 50 trying the cooking extravaganza I’m totally convinced that must people keto or not either they don’t like to cook or enjoy simple easy things.

Cheapest I have seen bone-in chicken thighs is 3.29, even at Costco. Maybe it is less than $2 where you are. Here in NJ it has gotten ridiculously expensive or hard to find. I have been looking for 3 days for chicken livers. Even the store I work at is out of them. I actually went to an actual butcher shop today and they were totally out of them and had no idea when they were getting more in. How can I make chopped liver for Passover if I can’t find livers??

Keto cooking channels are a niche. I don’t think anyone wants to unsubscribe to be spiteful. It is just that when you we are struggling with certain foods it is comforting to go somewhere where are you know what you’re learning is in line with what you’re trying to accomplish.

I love Dennis’s recipes and content but I disagree with what he said about calories just being physics as I don’t believe in the CICO model. I just think based on my own experience that there’s a lot more nuance to it and it depends on the context, and the same thing is not necessarily going to work for everyone. I can tell you that I hit a plateau eating less than 2000 calories a day and doing over 10 miles a day six days a week on the elliptical machine, and I blew through that plateau when I started keto and intermittent fasting without counting calories and while only walking for my exercise. But that doesn’t mean that everyone is going to have the same response, and some people may actually do better eating a more standard diet and counting calories. I just know that for me focusing on hormones and blood sugar has been a far more effective method, and I feel a lot better both physically and mentally.

I watch a French chef Jean-Pierre ,but he is just so funny to watch. I have learned a few things but I don’t agree with everything but I enjoy watching. WHY unsubscribe because he is not Keto?!?. I don’t get people. I will subscribe just because the person. There are channels that I do not subscribe to or unsubscribe to but don’t announce it or the reason why.

Dennis and I are friends, but we respectfully disagree on the "calories in, calories out" model and that "a calorie is a calorie".

Once I heard Dennis was abandoning Keto (like so many others now [DeLauer, Joe Duff, etc.]), I unsubscribed. Nothing has changed in the overwhelming research showing that a ketogenic diet has myriad benefits and is essentially the diet that humans have evolved to consume. My guess is that it's all about getting more subscribers and not 'keto' itself. A shame. Here's hoping you don't go down that path...

That’s quite the assumption ‘pmfith’. I appreciate both of these guys, I’ve learned a ton from their videos and had to modify some things because of how I felt. Everyone is different!

You’re making broad generalizations about humanity, casting aspersions, and ascribing morality (or lack thereof) to the way SOMEONE OTHER THAN YOU eats. How’s the weather up there on your high horse? I bet Dennis is crying himself to sleep because you’ve unsubscribed.

We were created to eat all sorts of foods that we can grow, gather, or hunt; but years and decades of eating non-foods and too many foods has broken the metabolism of many of us. Also agree with Steve that different people can eat differently and both be healthy. I need to eat low carb due to type 2 diabetes. Steve I agree that Proper Human Diet is not a very good term. I also agree with Dennis - most people should be able to eat more fruit. My body can only handle small amounts of fruit now.

Pmfith not everybody's metabolism is the same. Full keto doesn't work for every one. I have been an over weight type 2 diabetic for years and i have never seemed to be able to loose weight on or off a keto diet. the answer for me was weight loss surgery and from that i have found that for me to continue my weight loss and to be successful not only did i have to watch my carbs intake but i had to watch my fat in take as well. We are all different and our body's work different as well. Dennis does a great job providing alternative recipes for meal and snack that we would other wise have to do with out. Can't fault him for that
