SeneGambia has the best Jollof rice. Formally known as Thieboudienne aka Benachin. It's a tribal dish, the Wollof created it, that's why it's called Jollof. Use meat with the red one and fish with the white. We love the stewed veggies, on the side. Jollof shouldn't be overly moist, it's drier on the outside and soft on the inside. It's chewy and delicious! Authentic Thieboudienne is definitely an experience I hope everyone enjoys at least once in their life.

Lol I never understood the whole Jollof wars thing. If it originated in today's Senegal, The Gambia and Mauritania - then they have the best Jollof rice because they made the recipe ie the standard in which to judge every other type. Like how you gonna argue countries that are deviating from the original “correct” recipe are doing it more right than the originators? Nah yours is a riff. It might be good but I don’t know if you can even call it jollof. That’s like saying New York or Chicago pizza is the best like Italy isn’t the pro & creator of pizza & the standard of how you judge pizza.

The interesting thing is the incorporation of Liberia in the Jolloff discussion. Liberian Jolloff is very similar to Geechee rice or Red rice by the Gullah Geechee tribe in the coastal south (Charleston, SC on down). The use of green beans, peas, and “trick meat” or spam is the same in both cultures. When you understand that history of Liberia (land where over 12,000 freeborn and newly freed slaves settled between 1822-1865 during American government led repatriation/“get rid of the free Black people” efforts), you better understand that commonalities between Geechee rice and Liberian Jolloff. Many traditions that were carried on by enslaved ancestors from all areas of West Africa sprinkled with an American twist is what makes up Gullah Geechee culture. Those practices and traditions were brought back and incorporated into their practices in Liberia by those who repatriated in Liberia. Hence, the similarities between Gullah Geechee rice (Red rice) and the Liberian Jolloff. Love to All 🙏🏾

They must've not paid attention in their American history class because even I remember learning about Liberia being the place where freed slaves were "encouraged" to "move back" to. Of course the food culture of former American freed people would come through.

Im from both Ghana and Nigeria and one thing I can tell you the Liberian woman was more humble and was less unbiased than the other two. Being from both Ghana and Nigeria and having tasted both at many Ghanaian and Nigerian parties since I was a child I say Ghanaian jollof is slightly better just because on average Nigerian jollof taste more smokey but has good seasoning but most Nigerians use very thick rice whereas Ghanaians use good seasoning and spice and they use the better type of rice that complements the stew made for it to cook in but Jollof really ranges and depends on the person who makes it thats just my opinion. I love both tho 🇬🇭🇳🇬❤

I am Ghanaian and I think that Jolof varies from house to house and that you have to get everyone from a country to find out which Jolof is best. We should be a united Africa so let’s stop labelling Jolof by country. West Africa has the best cooking so If one wins we all win. I feel sorry for Liberia because they weren’t even part of Jolof wars to start with 🤣🤣🤣🤣
