He said it was village jollof (meaning cooked in palm oil) so that explains the light color village jollof typically doesn't have tomato. But putting those god awful olives in the rice is horrible

Now, taste is subjective and we appreciate creativity - but suya is traditionallly grilled over an open flame - so I knew Mr. Airfried wasn't going to win, lol. I love how considerate and knowledgeable the winner was. His looked the best too!

Once i saw air fried I knew his was going to be a let down. When i was growing up in lagos, suya was on a tender grilled meat(usually goat) that would resemble teriyaki chicken with dry rub. Served on the side of the road by street vendors.

I use an air fryer to make suya, but there be tricks to it. Also for the smoky taste you can cheat with liquid smoke. The things cravings and no garden will make you learn. 😅

The thing is ….. if he wanted to make suya with chicken there are these Caribbean style chicken bites that he could have started with (the cut and cooking method) and then put the spice. That would have been way better and atleast tasted good. Homie doesn’t cook 😅

WALE MY BOY. can't have a west african cookup without the sibling rivalry brotherhood that is Ghana and Nigeria. Segun deserved to win, this boy understood the assignment. Wale serves his food like I'd like it too - meat and salad is lit. But Suya is one of my favourite foods and as a Ghanaian I am blessed the Nigerians introduced it to us.

first mistake was using beef instead of lamb. The regular suya on the street is almost always lamb/sheep. Cow is not as tender and juicy.

Originating from the Hausa Region in Northern Nigeria, suya, or tsire, is a smoked, seasoned meat skewer. Tsire is actually the name for the meat, while suya, although it's the mainstream name, actually in Hausa denotes "how it's made, not necessarily what it is.

Hi a guy from Côte d'Ivoire here. We love Suya over here and we call it Choucouya. Yes it hails from Nigeria but I think our folks make it right too, and we have also so many combinations. The people who make it though are mostly the Hausa people, and they're so good at it, we are blessed to have them.

It's amazing how culture travels. Suya traveled from Nigeria all the way to Sudan through hausa people. It is known there as agashé. And ive recently tried it here in Egypt from a Sudanese food truck in cairo, and it's beginning to get popular among Egyptians.

You'll probably need to find an African store, even then unlikely they'll have authentic Suya spice powder. It is native to Nigeria (and the North at that). In the U.S. a lot of Nigerians make "recipe" versions and trust me, might as well not even have it. This should be a all or nothing sort of thing.

I want to make this so bad. I made peanut powder a while ago but I don't have all the seasonings for it. I tried to make jollef rice but I didn't have all the ingredients either lol but I used red pepper Scott bonett pepper, tomato paste and chicken bouillon. YOOOO it was sooo damn good but that's all I made lol there's so much more ingredients that go into it. God bless next time after I get all the ingredients I'll make it. Just order suya spice known as yaji online or from an African store. The peanut process (kuli kuli) is very complex moat Nigerians don’t even make it at home but buy it. Don’t use peanut powder!

As a Jamaican-American with a Nigerian husband, I gave the second dish a major side eye, especially being in New York. I’ll take the 3rd dish. The best suya I had was in Lagos and second was in Benin City. I love the beef and liver but I’m so interested in trying lamb.

In Cameroon we calle it soya … mostly when it comes to meat, especially goat sheep cow the haussa poeple are in charge of it and handle it very well. I don’t know how it’s in NGA or GHA but they do kilichi as well for example where they put peanut and spices as the brother said in the beginning, but I never saw soya with peanut in Cameroon. You should try that one too if you can find an authentic Cameroonian. Bon Appetit 👌
