Like always. You can make bread looks easier to make. And it does! I never failed trying your recipe. And thanks to your no knead dough, it became my family favorite bread with various filling and toppings! I can't wait to try this one. Kneading dough is kind of "frightening" and a hardwork. Love the recipe I had them come out perfect once but I made them again and the dough just isn’t as fluffy anymore, more like pizza bread, how do I make them fluffy?? My dough comes out very sticky so it’s hard not to use so much flour when I knead it

I think you use too much flour, as you see in the video the dough should be soft. You may add more of softened butter to loosen the dough and continue kneading until well blended. You can use a mixer too.

You can make cake flour from all-purpose flour/plain flour. For 1 cup of cake flour, use 1 cup of all-purpose flour/plain flour and take 2 tbsp out and replace it with 2 tbsp cornstarch. Sift twice or more.

Normally after added the butter, the dough will be sticky. Maybe you use too much flour? If your dough is too dry please add more butter or milk.

I'm a newbie baker and had some issues: Any tips on why a lot of liquid came out of the buns in the oven and the filling was just the coconut shavings? I also had trouble closing the buns after putting the filling in. It was still delicious though!

Hello Karen, sorry to hear that but don't worry, practice make it better. Maybe it is because you don't seal it tight enough so that during the baking the butter melting and leaking out leaves only the coconut inside. Solutions: please don't add too much filling and close the dough tightly without gaps or holes, so that the filling stay juicy.

You are so creative with your sweet breads. Ques. I love coconut and pineapple togethet. Could I add a bit of crushed pineapple to this recipe? Any adjustment to the recipe?

Thanks very much. Yes, you might make a twist by adding crushed pineapple into the filling ingredients. Add the pineapple and coconut 50:50 will work too.
