INGREDIENT COCONUT MACAROONS (coconut cookies)
2 egg whites, (from 2 large eggs)
1/2 cup powdered sugar (icing sugar)
1 1/2 cups (130 g) unsweetened shredded coconut
pinch of salt and vanilla extract are optional.
1. In a large mixing bowl, whisk the egg whites, pinch of salt and powdered sugar until foamy.
2. Add vanilla extract in the shredded coconut and stir gently with a spatula. Try to make a ball with your hand, use coconut oil for form the biscuits. squeezing the ball a little. If it is too dry and doesn’t hold together you can add one small egg white. If you think it is too moist and wet, add a little extra coconut.
3. preheat the oven and bake on medium rank at 325 F - 160 C for about 20-25 minutes till the golden brown color.
4. melt the dark chocolate chips.
5. Cool coconut macaroons for about 10 minutes before dip them in the chocolate. Place in a fridge till chocolate sets.

Hi! I am going to make them again! So delicious. I have a question but don’t know if you could tell why your coconut looks yellow and the one we purchase here is white. I wonder if yours is a bit roasted. But anyway they taste good ,
