Coffee Cake Cookie Demonstration
Ingredients
2 sticks softened butter
1 cup brown sugar
½ cup granulated sugar
2 eggs
½ teaspoon vanilla extract
4 cups flour
2 tablespoons cornstarch
2 teaspoons baking powder
½ baking soda
1 teaspoon salt
Crumble topping
6 tablespoons butter
1 ¼ cups flour
½ cup light brown sugar
1/3 cup granulated sugar
¾ teaspoon ground cinnamon
¼ teaspoon salt
Glaze
1 1/3 cup powdered sugar
3 to 4 tablespoons milk
Instructions
1: Preheat oven to 350F and line a baking sheet with parchment paper. Set aside.
2: Combine butter and sugar in a large mixing bowl and use an electric mixer to beat together until light and fluffy.
3: Add egg and vanilla and stir until well- combined.
4: In a separate mixing bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
5: Gradually add dry ingredients to wet and stir until completely combined and dough is uniform.
6: Cover dough and place in refrigerator while you prepare your crumble topping.
Crumble topping
1: Melt butter then add flour, both sugars, cinnamon and salt and stir to combine in a large mixing bowl.
2: Use a fork to gently toss/ claw the mixture until you have a clumpy crumble topping.
Assembly
1: Scoop cookies into 2 tablespoon- sized balls and roll until smooth. Place on cookie sheet, spacing cookies 2” apart, and make a small indent or nest in the center of the cookie with either your thumb or the back of a tablespoon.
2: Take a handful (at least 2 Tablespoons) of your crumble topping and gently press into the nest you created. You’ll have a heaping mound of your crumble topping, use a lot! You may have some of your Crumble topping left over.
3: Bake in center rack of your preheated oven for 12 minutes or until golden brown on the edges and bottom of the cookie. Allow to cool for at least ten minutes before decorating with glaze.
4: To make glaze: Whisk together powdered sugar with 1 Tablespoon of milk. Add additional milk as needed until you have a smooth glaze that ribbons off your whisk. Drizzle over cookies, then wait just until glaze has set, then enjoy.
