Hello everyone :)
This week's video is 'coffee pecan rolled scones'.
I've done this recipe before with a live stream,
But I took a new video to make it easier for you to see the recipe.
Made with cake flour and a sufficient amount of butter,
It has so many flaky layers.
It's very crispy and light like puff pastry.
I love this recipe so much :)

▶Ingredients (for 8 scones)
- Scone dough: 200g cake flour, 100g unsalted butter, 6g baking powder, 30g granulated sugar, 1g salt, 83g whole milk, 3g coffee extract
- Filling: 27g toasted and chopped pecan, 30g dark muscovado sugar (substitute dark brown sugar if you don't have it), 2g instant coffee powder
1. Mix the flour, baking powder, sugar, and salt on a work surface and mix well.
2. Place the diced cold butter on top of the flour and use two scrapers to chop it to the size of a red bean to a grain of rice.
3. Make a groove in the middle, add cold milk and coffee extract, and mix until smooth.
4. Press down the dough to form a lump, then cut in half and overlap 3 times.
5. With sprinkling additional flour, roll out the dough with a rolling pin to form a rectangle measuring 20cm wide and 25cm long.
6. After spreading the filling evenly, roll it up, wrap it in plastic wrap, and let it rest in the refrigerator for at least 1 hour until it hardens.
7. Cut off both ends, cut into 8 pieces with a thickness of 2~2.5cm, and bake at 190 degrees Celcius for 17 minutes. (Wizwell Lumi Oven)
*Storage: It's the most delicious when it's consumed within a day. It can be frozen for up to 2 weeks. When eating frozen products, heat them in an oven or air fryer for about 5 minutes at 150 degrees Celcius.
