Today I brewed with the Chemex for the first time in a long time. I used light roasted Colombia Aponte honey that at 22 clicks on the Comandante brewed with Origami and V60 filter felt a little bit over extracted and not as clean as I had as a batch brew at a cafe recently. I then thought I might try it as a Chemex because I love high grown Colombians and Ethiopians in the Chemex. I took the grind size to my usual 26 Clicks for Chemex with paper filter. 31.5 grams to 500ml took about 4:30 min to drip through and it just felt under extracted and not so clean. I'm sure when saying very coarse you are using something closer to 30 clicks on the Comandante. James Hoffman says use the same grind size as for V60 and let it take longer time to filter through. I'm trying to find some middle ground here. Oh well taste is a spectrum.

Hey Patrik, thanks for translating your coffee-passion into something that we can all approach. I really enjoy recipe videos of yours, but "one day" do you mind sharing a video briefly discussing the variance of temperature of water used on beans that are roasted within a week, post 2 weeks, and etc? You are a meticulous barista, the reason why we love you, but if you could generalize the information it would be SO helpful since same recipe don't work for continuously aging beans.

I tried this recipe today and it was delicious. Super simple too. It does have more body than I'm used to on the Chemex, but I like it. I don't have a commandante, but I went on the slightly coarser side of medium, and it worked well.

Finally found my Chemex recipe! I always felt like I was over extracting my coffee ever since getting a Chemex a couple of months ago. I did this method with a 1ZPresso JX grinder with two full rotations. Perfect!

oh interesting, id say coase with the jx is more like 2.5-3 rotations - for the james hoffmann recepie for v60 and chemex im in the range of 2-2.5 rotations

Thanks for the great video! Just have a couple questions from a newbie. When you start the 500g pour, are you including the initial 100g first pour in that, or do we zero out that first pour. Second, every time I hit the desired weight and remove the filter and grounds from the chemex, I end up with less weight in coffee for which the recipe calls. Example, for a 500g recipe I wind up with 377g of coffee after I remove the filter/grounds. What might I be doing incorrectly? Thanks for any help you have to offer!!

I would imagine the first 100g is included in the 500g total. That’s what I’ve always seen on other brewing videos and recipes from the cafes and roasters I like.

Chemex is such a finicky brewer depending on coffee I hardly ever use it. I find many coffees that don't taste as good on it vs V60 or Aeropress. Almost like it doesnt bring out flavor but takes it out of the coffee.

Just out of curiosity, have you ever tried a chemex using the same grind and recipe you use on the v60, but with a longer overall time ? I used to think chemex was too bright and clean until I stopped grinding so coarse and instead shooting for a longer drawdown.

@@noahdwhitney My opinion is that (for coarse grind settings) it is better/I don't want to go below 700ml for a chemex, unless I wanted to use the smaller/narrow glass version. The glass sides are steeper with it, made for smaller volumes, etc. So, if you grind much finer, as you stated, that might work better for the 500ml at 4 min. brew shown here because that may provide more flow resistance in the "bigger" glass chemex and mimick the 500ml of the smaller chemex.

Your recipe is different than 90% of others Chemex KZbin videos ! Instead of double, for 30 gr you are pouring 100 gr of water right away Instead in 2-3 phase pouring water, you are pouring all 400 gr at once Instead of 93c, your water temperature is at 96c Let me try...maybe it's working maybe not.
