Colcannon Irish Mash Video Recipe cheekyricho.Video cooking demonstration and recipe for the creamiest,tastiest most delicious Mash you could imagine. We are talking about the Irish National Dish, Colcannon. Perfect as an easy side accompaniment for any savoury dish. Why not make it for your St Patricks day Celebtration This dish is so popular there are even songs written about it. Its a meal in iteself. Do try it, the kids will love it .
INGREDIENTS:
100 grams green cabbage
100 grams chopped bacon
1 chicken stock cube
small bunch of parsley chopped
40 grams roughly chopped spring onion
cracked pepper to taste
750 grams peeled cubed potato
30 grams cream
40 grams butter.
METHOD:
Cooked potatoes in boiling water with the chicken stock cube on a medium heat for about 13 minutes until tender. Stir fry bacon until crisp, add cabbage, pepper, spring onions and parsley until tender but still bright green. Do not overcook or put the lid on because the colour will go grey. Strain the potato from the liquid, retaining the liquid. It will be used later to ensure a rich creamy steaming hot mash. Mash the potatoes with the cream and half of the butter until rich and smooth, add a small amount of the water from cooking the potatoes and mash in until really creamy. Mix the cabbage mixture through the potato and mix well serve with the remaining butter dolloped into a little indent on top of the Colconnon. As it is served the butter will melt down and dribble down the sides.

I'm Irish and this is a solid recipe. although in our home we use a little hot milk and butter only to loosen the potato mixture. and do not use spring onion, or scallions as they are known here in the recipe. it is just potato, cabbage and bacon. this is also great refrigerated over night and formed into patties or burger shapes and fried with an egg for a breakfast or brunch the following day ☺

+Emma McGuinness thank you very much for the great feedback. We love the idea of making potato cakes with this recipe, I'm going to try it soon they sound amazing. This dish is very uncommon here in Australia, I tend to put parsley and spring onions in most things and thought it might make a fresh twist in our version. I have done this recipe twice. On the second round, I've shared this meal with a Christian sister, and she was practically blown away by the taste - she really enjoyed it!! This dish is very easy, and though I do nor celebrate St. Patrick's Day, you all have made this dish very easy to make! When I said 'you all,' I meant not only tou, but 2 other cooks that made it so easy. Thank you all so much for such informative videos!

Thank you for your enquiry. If you have access to a microwave that would work. Otherwise, I would put the mashed potato in you crockpot and keep it hot. I would then stir the cooked cabbage/ bacon mix through just prior to serving. overcooked cabbage is unpleasant, this way you would retain the crispness and colour of the vegetable. Hope this helps. I would be using the crockpot for the potatoes as that would keep it hot, you may also be able to use the pot insert to serve(depending on its style)I would then use Mums Micro to quickly heat the cabbage etc, last thing then fold it through. A tip would be to slightly undercook the cabbage the day before so the final heating will finish the cooking without overcooking. The flavours should develop beautifully, whenever we have left overs we just reheat them in the Micro.They are a meal in itself

This looks really good! I want to make it for a small party after a baptism I am attending this month, so I will need to prepare it a day ahead and take it with me to the church (it will be served afterwards at a lunch gathering). Any suggestions for preparing this ahead and re-heating it the day of the event? Could I possibly put it in a crock pot & heat it up again or would that ruin the texture? Thanks!

I will have access to both a microwave and crock pot (I will be re-heating in my parents kitchen, so I will have all the usual conveniences. :) ). Would the crockpot be better over the microwave?
