This is lovely! Maybe not exactly like ma made, but there are two million different ways to do it, for all the homes in Ireland, everyone's got their own. Don't be afraid to throw in leftover Brussel sprouts for greens, just chop 'em a bit -- spinach is fine too. There are many noble combinations, but it's the potatos and dairy that make it happen.

Bacon oil 🤤🤤 makes this dish very yummy and rich in flavor. I love my cabbage with a little crunch as well. I love kale but it just doesn't have the same St Patrick's Day feel to it haha. It seems you can almost change the whole recipe or just make mashed potatoes and still call it colcannon 🤣🤣, just kidding. It's a great recipe, very rustic and comforting. I wouldn't change a thing...it's perfect, especially with the pool of butter on top. I love it! 👍LIKE #29

Lol I'd say you could change it all the way 😂 This is one of those old recipes where your mom or grandmother would just toss in whatever they had to keep you full and quiet 😂 I've tried it with the kale, and it was a no go for me, cabbage does just have that Irish feel to it. Bacon fat is life as far as I'm concerned, and I always save mine, I even saw them selling it in the store, and for a hefty profit too. I'm glad you liked it, that means a ton to me, because I know you KNOW food.😍 And I actually think its the law to serve with butter on top🤔

Concannon is traditionally served on Halloween. It's crazy to me that serve it on St. Patrick's Day but totally forget that in Ireland many Irish foods are still associated only with Halloween/All Saints Day.
