Chef Patrick, thanks for that recipe. It's awesome and you're an excellent cook. I'm from Colombia and just want to suggest something: here, when we cook the original ajiaco, we don't use sour cream. Instead, we use heavy cream and we don't use ají in the original recipe (it changes the flavor) but thank you for teaching everyone our dishes.

Me and my family are from Colombia. This is correct we usually do not add the aji. But the chicken broth is an old school thing that my grandmothers used to do back home they took the chicken backs to make chicken stock and store it for sancochos and ajiacos! But your estillo and version of this soup is amazing I’m following your recipe now

Your version of aniaxo may be a bit less traditional but it has loads of flavor and I thank you for that. You put a spin on the traditional dish. I been reading the comments and the “ROLOS” aka people from Bogota are coming at you hard for the use of carrots but I have to say your recipe and spin on our soup actually taste amazing. I will say the use of cilantro does take away the flavor of the guascas but you added your own spin and that is okay!! Love and light and positivity your way you did great !!

Very good but we traditionally never do use celery and carrots on the ajiaco!!!😢

Hello thanks for your reply. The carrots and celery were used to make the chicken stock only. If I used a whole chicken for this recipe, that would have been enough to flavor the soup but since I used chicken breast I had to make a traditional stock. Thanks for watching 🙏🏾

@@Sabrosollc It's a normal potato, frankly, but it's grown in Iraq, and we, as Iraqis, feel that everything grown in our country tastes special, so we say Iraqi potatoes or Iraqi tomatoes, although they are just the regular potatoes or tomatoes, but they are Iraqi, and this is what make them special, It's a kind of arrogance we have. 😭😂❤️

Nunca me propuse hacer auténtico Ajiaco, siempre es difícil lograrlo cuando no estás en el país de origen. Sin embargo, hay muchas recetas en línea que incorporan estos ingredientes. ¡Gracias por ver y representar a Colombia! 👍🏽

Hello. The vegetables I used at the beginning of the video were to make homemade chicken stock. I had to use the stock for the recipe so I showed how to make it using a pressure cooker. For the actual soup, please tell me what I used that was out of place? And yes, green onions would have been great, but my local markets didn't have any. Thanks for watching!
