At the bottom of the composition tab in the properties menu there is the atmosphere presets that you can give to another object

Scientifically speaking and in universe sandbox which I love about is that in order to keep gasses in the atmosphere, you need a strong enough gravitational field so either add more mass or more density. Also keep in mind of atmospheric layers Venus has many.

Realistically the atmosphere on Mercury would be blown away because there's less gravity plus how close Mercury is to the sun means solar winds would slowly blow it away. Im not sure how the game does it though

The rotation of the planets can cause several problems and it will be very hard to terraform then like that, and rotation don't has an impact on the theme of the planets, so i approve changing that.

I recommend adding a bit of hydrogen to smaller plants like Pluto. so it Won't lose it's materials.

nitrogen is a must to vegetations so when you added it the game deemed it as habitable , and why after removing it it stayed habitable is probably because you should have let the game run a little bit to see the vegetation disappear maybe?

If you gave a body hidrogen just a tiny bit it will hold the water, no matter how small it is. I saw spacechip do That and it worked

Hey I have a question so I want you to make me a solar system because I don't have the game so could you. I'll tell you what u want. So I want a huge rocky planet and it to have rings and 21 moons with 3 being binary and habital and the others could be bogs asteroids and a fragments and one gas giant. The rocky planet could not have life ok thank you of you do.
