We started canning on June 6 for the first time. Canned meats, stew, soup, apples, pickles, blackberry jam. We’re up to about 72 jars in a month. Lots more planned. With power outages in south Texas I got concerned about having a lot of frozen meat and vegetables. We could lose it all quickly. My wife and I would help our grandparents can as kids. We’ve decided to bring back preservation into our lives. We’ve shown what we’ve done to others down here in hopes of inspiring them to begin preservation as well. It’s the smart thing to do. Plus it’s so easy once you get rolling. Thank you showing us what you’re doing and guiding us through. We are trying to learn all we can and share all we know. The times we’re in, who knows. Plus the food is sooooo much better and tastier. Thank you from Dan & Helena

With the pumpkin, make homemade ravioli using it in place of butternut squash. For the ravioli dough, use 300g all purpose flour, 2 eggs + 3 yolks (you want 185g of liquid so you can add water/olive oil to make the difference) and 2 tsp salt. You can also make spinach/ricotta ravioli at the same time. Freeze on cookie sheets if you have leftovers. I have a Kitchenaid mixer with the pasta attachment but you can roll your dough by hand. Trust me, it is delish!! Love you and Todd! I'd rather watch your channel over cable TV any day! Thank you for making content!! and GREAT content!

What is cowboy candy? Sweet potato and squash ideas; soup add a few carrots , cube boil and mash instead of mashed potatoes add drop coconut oil and cinnamon, cube boil till al dente and fry with onion garlic drop of cinammon. Hope that's enough ideas.

Pumpkin is excellent in chili. Love canned sweet potatoes, pumpkin, carrots in pureed soups... Solo or in combo.... I use alot in dog food...

I use my home canned sweet potatoes to make a breakfast hash, or dinner hash with sausage, onions, peppers, and sometimes eggs. The canned pumpkin can be made into a soup, or just drained and roasted, you can do that with the sweet potatoes too. You can use the sweet potatoes or pumpkin pureed in any number of sauces, or even mixed with flour to make pasta or gnocchi. And as always you can direct from the jar puree it into baby food.😊

I don’t can pumpkin or sweet potatoes because I can store them whole. However, I do grate and freeze some to pop into stews or Asian dishes as a quick and nutritious thickener. Tbh, family prefers potatoes to any other carbohydrate. Grrrrr 😂

Last year we had a stellar year in our garden. We canned everything we could, plus gave away green beans and tomatoes. Who knew what was going to happen. We had an elderly aunt who took a turn for the worst and we have needed to devote time to her care. As it turns out we will not be able to make a garden like we did last year. We are going to rest the oldest beds until next year. We believe God gave us the means to prepare for this time.

Wow you are doing great! My suggestions are as follows: instead of using your potatoes in the airfryer, use your sweet potato, even more yummy than spuds! Use sweet potato instead of spuds when doing a family roast. make a roast vegetable salad using pumpkins, squash onion aaaaannnnnd sweet potato LOL Make sweet potato dip to have with crackers OR add sweet potato and garlic to hummus for some different yumminess :) ALSO for the carrots that Todd doesnt like, when you open them reheat them with some orange juice and maple syrup OR coat them in orange juice and a spice like Cumin and make carrot chips in the air dryer. Mix the carrots in with the hummus with some spices for yet another taste sensation :) LOL Hope you try some of these :) xxx

I am so green with envy of y’all’s basements! Done here in southeast Texas we are too low for a basement! Only 14’elevation from the Gulf of Mexico. My storage is under beds and in closets. Your set up is super! The pumpkin can be made into pasta. We eat it with butter and pork chops. The squash can also be made as a casserole with chicken curry. Hope this helps you to consume your canned food.

I also live in Southeast Tx and I always am envious of the basements and cellars. I have taken a closet in a extra bedroom and made another pantry. Also under beds.

Cubed (soft cooked) sweet taters, black beans, a few red onions makes awesome taco/burrito filling. Pumpkin makes a great soup - combined with stock, heavy cream, maybe a splash of white wine.

I add a few chunks and juices of canned pumpkin and squash to the dogs’ dishes at night … they love it!!! Just made 2 qt of butternut squash into soup with a pint of added carrot/fennel soup for dinner last night

Interesting as a religious Jewish person we have to let the land in Israel rest every 7 years. Our last Jewish year (around September 21- September 22) was a sabbatical year We call the sabbatical year Shemita you can Google it. Some products take 2 years to grow. Most of the Jews from all over the world financially help support the farmers the year of and year after Shemita.

​@@1870s At some point will you start putting flats of empty jars where you would normally store the full ones? I've seen some people cycle them so that they are always on the shelves, just upside down and clean after emptied. Did the extra year of food all get done in the last year, or were you doing like 1.25x the last 4 or something like that? Just thinking that is a lot if extra preserving and jars to find the one year.

I just wanted to tell you that you two have been an inspiration for us as we started homesteading 4 years ago. Your canning videos have given me a lot of ideas/help. (I've mentioned you twice in our videos.) I'm wondering if you miss working in the garden this spring? I know how much I enjoy starting seeds and 'digging in the dirt' and would really miss it.

I do a casserole with cut up sausage. I do use a maple sausage or a an apple sausage for breakfast sausage would work as well. I cut it up into little rounds and add sweet potatoes and cut apples up in it and then I put a like a strudel topping over that and bake it, and my family really really enjoys that.

Make a spicy beef and use those sweet potatoes or pumpkin as a mash for a sweet and spicy Sheppard pie. Add in some of those canned veg also.

HI I'm new here and heard your call for sweet potato/pumpkin recipes. I once had a North African goat meat & pumpkin stew shared with us by a neighbor. It started with sautéing an onion in a bit of oil in a heavy bottomed pot, then toasting the spices (paprika, cumin, cinnamon, all spice, garlic powder and turmeric *if you like a little heat you can also put in some cayenne or red pepper flakes*) until they smelled like heaven (about a minute). Then 2 large cans of stewed tomatoes (4-ish cups) and a dash of salt and pepper were added. Reduce the heat to medium and add in your goat meat and vegetables (that time we had pumpkin, carrots, and okra) If the tomatoes & their juice are not enough liquid to cover your veggies just add a bit of water or veggie broth if you have it on hand. Everything was just left to simmer until tender and served with rice.

Favorite way to use the pumpkin would be savory soup cooked up with butter, onions, curry, garlic and chicken broth. For the sweet potatoes, try sweet potato hummus! Would be good for summertime.

You can use that pumpkin for pumpkin soup with coconut milk, chicken and some Thai basil…YUM. also for some pumpkin ravioli in some browned butter and sage. If you throw some ground sausage in the pan, you have a complete skillet meal. That’s one of my absolute favorites!

Canned Sw potatoes and pumpkin, drain and add to a tinfoil lined cookie sheet. Drizzle with olive oil and sprinkle with salt, pepper, rosemary to taste. Bake at 425 for 20 minutes. It’s delicious! The oven cooks off extra water.

For the canned pumpkin/sweet potatoes… I make a really delicious casserole with canned chicken, rice, peas, and butternut squash. You could totally substitute what you have for the squash! I add cheese as well, because….. well we love cheese. You basically mix everything up in a casserole dish and bake it until the rice is cooked. Super easy, and even my kids enjoy it. It heats up well for leftovers too👍🏻

Pumpkin and sweet potatoes go great in kind of fried rice with sweet sausage, golden raisins, and cardamom (onion and garlic, whatever you want to throw in). I usually do this as an acorn squash stuffing, but you can definitely just make it just as fried rice. It's a warm, comforting meal and the raisins and cardamom give it a bit of an Indian vibe. So good.

I am perpetually in awe of your pantry! Canned pumpkin is great in Thai green or red curry with you favorite protein, and puréed it’s awesome used to thicken full flavored soups and chili. If I had an excess of canned sweet potato, I’d make a sweet potato gnocchi with brown butter and sage : )

Pumpkin chicken chili!!!! Great way to use pumpkin. Calls for pumpkin, chicken, onion, peppers, diced tomatoes, chili season that you like, a little chicken stock, jalapeños and a brick of cream cheese. Top w shredded pepperjack cheese, sour cream and cilantro 😀

Some ideas to use the pumpkin and sweet potatoes. Putting either of them into Currys, gnocchi, tots, make dinner rolls with them, or put savory spices on them and air fry them.

Make pasta sauce with pumpkin or sweet potatoes. I like two versions - one with garlic, sage, parmesan and cream. Thin it with stock as needed. Second is peanut butter, cumin and hot sauce; again thin with stock.

Love this update on the pantry stock! I've had unintentional years off, so still haven't gone through a neatly planned one. Pumpkin and sweet potato chunk fries hash or whatever shape they are canned in. Seasoned wildly or just basic. I've done BBQ seasoned, taco seasoned, etc. Fast easy side dishes. Other comments covered those two items, really. Those anti-Todd-carrots: Cast iron goat meat pie (shepard's pie style), with the excess green beans. (Think you said 3 rows have lasted 6 months and you still have plenty, 4.5 ish rows? Not sure about your Irish potato stock though.) Obviously blended into tomato based sauces. Carrot and coriander soup. This would be my top choice, so long as the issue is color loss only. I'm not a fan of cooked carrots in general, especially canned, but that creamy soup is fantastic. (The color lack will be visible if it's a common soup you already eat. Unless you can spike it with bright color additions, like red onions, a reddish veggie broth. Haven't heard you mention it before, so fingers crossed it's undiscovered.)

I use sweet potatoes in place of white potatoes on shepherds pie and top it with a little aged cheddar. You can also make yummy flat breads with sweet potato or pumpkin and a few pantry staples. I also puree it and add it to chili or soups for extra veggies.

We took this year off as well.. the only thing we are planting is rasberries, blueberries and strawberries.. no garden.. eating through what we preserved.. I needed the break and so did our garden.. still plenty to do.. new coop build is almost done.. then onto a new cow barn.. no rest for the weary..

Cook up the sweet potatoes and pumpkin as savory mashed potatoes, mix in carrots, corn, cheese, and meat of choice as a casserole. We like apple chicken sausage in ours or ground sausage.

I make soup with butternut squash adding apple, onion, and broth. Use hand blender. You could do that with sweet potato and pumpkin.😋

Check to see if your local Amish/Mennonite community has a produce auction. My husband and I attend ours as part of date night. Excellent quality produce at very good prices. That’s how we fill in the gaps in our garden. Be familiar with local prices before you go.

I tend to over do it on canning. My daughter and her family live on our property and they run their own security systems business and it's either feast for famine for them . Therefore, when I garden, I tend to grow to much simply because when it's lean for my daughter, she can come to our pantry and "shop"

Drain, dry and roast or fry in butter your pumpkin, squash and sweet potatoes and toss it at the end, into your parmeson cream risotto. Heaven

I like to take my canned potatoes and fry them with onion and garlic in some coconut oil. Salt and pepper to taste. Also, make a sweet potato pop tart for snack. Use filling like a jam or jelly

I like blending up pumpkin and added it to tomato soup. It gives it a nice flavor/ texture. Also pumpkin/ sweet potato in a beef stew is also delicious.

Have you ever tried carrot soup ? It’s delicious. Chicken broth onion carrots and coconut milk. Nutmeg maybe cinnamon salt and pepper.after cooked soft blend somewhat smooth little textures. Enjoy

You can use equal parts cassava flour and sweet potatoes to make dough and use it for quiches. Very yummy. A little salt too.

Wow this whole tour is amazing but I'm so jealous of your cold storage basement!! Sweet potatoes for TWO YEARS?!? I'm in the Pacific Northwest and we don't have a basement and I'm seriously drooling ☺️☺️☺️

Drain & puree your Carrots. 1 tsp better than bullion chicken flavor. Add heavy cream, a little curry powder and s&p to taste. Cream of carrot soup! Yum!

Crushed pumpkin and squash ontop of cottage pie instead of mashed potatoe. A veg mash instead of potato is nice.

If you can hold out till fall, Keeney Miller orchard in Erie sells red, yellow and white varieties by the big paper grocery bag. I buy a few bags every year. They sell big taters or smaller ones bagged as seconds.

Carrot soup as for the pumpkin and sweet potato pumpkin and bacon risotto is the bomb and you could switch out pumpkin for the sweet pots

One of my favourite ways to use canned squash is in pork squash and sage meatballs. So good, especially when the pork fat gets a little crispy on the outside.

I LOVE sweet potato soup. make it spicy please so the sweet and the spicy blend so well! I use chicken stock for my base and whatever you like for additional veggies. The toss in the red pepper flakes! Yes mama!

I would suggest a hearty pumpkin or sweet potato soup (pureed). You can make it sweet or savory dependent on how you season it.
