She spoke on this. She went to the audition after working out and being sick, so she had a deeper, raspier voice. When she got the job, she used her normal voice. After a little while, producers asked her what happened, and told her to go back to the voice she used during her audition.

It's really fun to see how Stephanie slowly grew into the character and "shaped" Rosa's voice. Her vocal range is absurd. Funny that she was originally cast to play Luisa in _Encanto_ because of her Brooklyn Nine-Nine reputation, but they found out how soft her voice could be and put her as Mirabel.

I'm betting a lot of this gradual change in vocal pitch was because she got so much practice over the course of the show. Vocal chords are muscles and the more you work them the better control you have and the easier it is to hit pitches that previously were at the very end of your range. I'm sure it was really difficult and painful at first to go that deep and still emote but the increase in her vocal range probably did wonders for her voice acting career. It's certainly paying off with her role as Vaggie in Hazbin Hotel!
