My Mom used to hold the pie pan up with her left hand and trim the crust all around the outside of the pie pan with a sharp paring knife before fluting the crust. It always fascinated me to watch her do that for some reason. I thought she was a magician the way she did that! Simple pleasures when you’re a kid make good memories as an adult.

This is the time of year that my grandmother and her sister would take a day and make their pie dough for the holidays and put it them in the freezer. They would take them out the night before and thaw them in the fridge to make the pie the next day.

It's okay to have a shrunken crust as long as you are no taking it to the fair. The reason your crust likely shrunk is because you didn't dock it (poke holes in it with a fork). When crust shrinks it is usually because there is no place for the steam to escape from within the dough. There are other reasons it might shrink but you did all those things perfectly. My mom was an excellent baker, and her specialty was pies. Without any exaggeration, she could make a pie crust in a matter of minutes, using her hands to measure and cut in the shortening, no ice water, and she never left it to rest. I don’t know how she did it, but there was never a pie that wasn’t totally delicious. I told her that I tried making a pie crust with my food processor once, and she laughed and laughed. What I wouldn’t do to have her back again…

Tom this was an excellent primer for the neophyte to baking. I personally still use one half butter and the other half lard, and I always hold the pie plate up to cut off excess dough using a table knife along the edge of the plate.

Excellent video!!! My mom taught me how to make pie crusts, she mostly used butter and lard, but did occasionally use crisco if she was out of lard; butter and lard/crisco gives you the flakiest crusts; my mom “docked” her pie crusts too, but would only bake it about 10-12 min, then brushed it with egg/milk mixture, then finish baking, that reduces shrinkage; I’m thrilled that young bakers are learning from you, you’re such a great teacher and demonstrator! Melissa, I appreciate your hard work recording and typing the recipes in the description. I can cut and paste the recipe into my recipe program. Tom, you are a gifted teacher. I enjoy watching you. One note: Google and Alexa both mispronounce Rao's. I have seen Rao's and the restaurant family many times on Food Network. It has a very interesting history that you may be interested in googling. It is pronounced with a long A and a long O. The Ra is the first syllable and O is the second syllable. Ina Garten did one show where Frank Pelligrino took her in the kitchen of Rao's and showed her how to make two of their famous dishes. By the way, I live in Elizabethtown, Kentucky. We vacationed in PCB every year for 30 years. If you all have not eaten at Hunt's in Panama City, you must try it. It is our favorite restaurant. God bless.

Tom and I have enjoyed several wonderful meals at Hunts Oyster Bar in PCB. It's got great food and character in the restaurant itself. We look forward to our time in PCB each year. We would enjoy living there but our family, friends, and church family is in Kentucky and it's too hard to move away from them all. So we enjoy a few weeks every winter there. It's not always super warm but I've never seen a snowflake there either, so I consider that a big plus! Thank you for the info on the Raos. It's definitely a brand we trust and enjoy. My mother made lots of pies for the family . She also made lots of pies for restaurants. During the holidays she would make probably 10 to 15 pies for a lady that always had her make them for her for Thanksgivings, Christmas time & maybe Easter as well. She always was to make 2 chocolate pies with every order as their children loved Chocolate pies. I remember when we set in the back seat & held a big baking sheet with 3 fruit pies or cream pies while she droves to their home to deliver them. My little sister would set in the middle of my older sister & I, with a smaller cookie sheet with 1 or 2 pies. My brother was in front seat with three pies & a cookie sheet with 1 or 2 between him & my mom on the seat. But we always delivered whatever they ordered . Those were the good ole’ days. I saw the lady that ordered them about 2 months ago & we talked about them pies. She remembered my mother always made the best pies. 💕🙏 Melissa we can be thankful we have our memories of the parents/ grandparents and pies forever. 🙏God Bless them & their work to get them done…🙏💕❤️

I keep my Crisco in the freezer so it’ s always ready to go. And I use my food processor to pulse it all together, dump it out when it’s where it should be (shaggy), squeeze it into a ball and wrap in Saran and let it sit in fridge for a while before rolling out. For me, the amount of water depends on the weather! For anyone who still is intimidated if the first try doesn’t turn out how they wanted, just keep at it. It’s one of those things that definitely gets easier the more you make it. Yum!! Excellent vid.

Tom the pie crust looks great. I tend to be a perfectionist and have to remind myself of many Amish who leave a teeny flaw in their work because only God makes perfect. I now use store bought crusts but for years I made pies with homemade crusts every weekend to take to camp. Usually 3 or 4 because it was a large family "compound". I cannot begin to imagine making 50 or 75. Your pie crust is lovely and I would be happy to use it

Such a good video. I have failed at pie crust over the years. Either they fell apart or were tough. Have tried different professional recipes like Martha Stewart and even Betty Crocker. We have a plan started for shirts to be ordered. We just have to finalize the last few steps of it. We have been pretty consumed with the work on the cookbook lately. Thank You!!! I love the fact that your pie crust isn't perfect!!! Every time I watch a video, on most videos, the product looks way too perfect. My crust looks more like yours so I feel much better. I was at first thinking, I made some errors, and I was going to start over. But like you said, if your pie crust has cracks don't freak out LOL!!!!

I love how easy your pie crust was to make. I saw a lot of your preps that was exactly like my mother. The placing you crust in the fridge and many of you prep steps ,, I tried making a few crusts and they were terrible so Istopped trying but watching your video has renewed my interest again. Thanks.

Thank you for this recipe. I've never done an egg wash on my crusts, or refrigerated them. Looks so flaky and delicious! I like to eat the unbaked dough that I cut off... lol Do you do all those steps for the top crust?

Yes. Make the top crust just like the bottom crust except of course, it goes on top. Look up the blueberry pie video we made back in the summer. We used a store-bought crust but you can see how he folded under the top and bottom crusts and then crimped the edges.

I’ve been waiting on this! I have made pie crusts in the pasts but it has been decades! And I was never very good at rolling the dough out and getting it in the pie plate! 🤦♀️🤷♀️ Don’t know about you, but I love to take those extra bits of dough and make cheese straws with them. Oh sooo good! Much better than the ones we bought in the box at Harris Teeter when we lived in Charlotte, NC! Well, now I want to go make a pie! But it’s nearly 10:00 pm so I’ll wait until tomorrow! 😋 Thanks for another great tutorial! 🙏🏻❤️🙏🏻

Tom, you are a great teacher, I make pie crusts the way my Grandmother did, when i mix mine up my dough is as wet as biscuit dough, no butter only Lard or Crisco, flour salt 1 egg 1 tbsp vinegar and ice water.I dont have patience to work with a dry dough, lol, My Mother in law made 5 pounds of flour into pie crusts about once a year, she rolled them paper thin, how i dont know, then put them in disposable pans and froze them with waxed paper in between, then she had crusts for the year.

As I remember, my mother just made her regular biscuit dough and rolled it very thin. It was great, and I've never had a pie as good as hers were, especially her custard pie or coconut pie.

This isn't necessarily a sweet crust, but we would recommend leaving the sugar out if you are making a crust for a savory pie.

My dear departed Mom used to say that the flour and butter mixture should look like fine gravel. She was such an amazing baker, cook, Mom and teacher. She has been gone for 16 months now, as well as my sister, and I miss them both so dearly.

I always used to make my pie crust from scratch. Then Pillsbury came up with these refrigerated pie crusts and they’re pretty darn good. So, I use them. However, I still make crust for my special recipes like mt lemon two crust tart or my tin roof tart, which is actually a Pillsbury bake-off winner. I recommend it. I’ve made it a few times.

We would never shame anyone for using a premade crust. We have and still do use them. They are excellent products. But if you have the time or are making a very special pie then we really like a homemade crust. Thanks for being at the table with us.

Tom & Melissa - your crust looks superb - and you make it looks so easy. I have watched many great cooks like yourself make pie crusts over my 83 years and I have tried many 'how to make the perfect crust' like you just did - using butter, shortening, lard or a combo. I have never had success so eventually I turned to the 'never fail pastry' recipe that calls for vinegar and an egg, and settled on using a combo of adding half butter - it has worked well for me over the years, and I get nice flaky crusts every time....but I still enjoy watching how other's make their crusts. I don't have that 'magic' touch I guess.

I never heard of using a egg ,but have tried 1 table spoon vinegar and 2 tablespoons water ice water is the key. l

That's how I make my pie crust and thanks for sharing your directions. I have also found to pre bake my crust with the beans and then let cool for 5 minutes then add the liquid fillings. Pumpkin, Pecan and I always reduce the temperature and put the pie ring on the crust too.

You can fill it with a dreamy Oreo filling with chunks of those delicious cookies and maybe a bottom layer of chocolate pudding, cause I know you are a Chocoholic Mr. Tom lol! I'm not sure what you are talking about exactly. We have cut strips of pie crust, baked them, brushed them with butter and rolled them in sugar and cinnamon. They get gobbled up super fast! I'm sure there are a bunch of variations out there for that treat!
