Matty! Pork steaks are THE dish of St Louis, MO! You cook them on a charcoal grill slow and low. Mine are THE BEST you’ll ever have! Dry rubbed, no sauce. My dad’s are pretty amazing, too, he simmers his in BBQ sauce after they’ve charred.

Pork Steaks are bone in pork shoulder steaks, basted in beer, salt, pepper, garlic powder and vinegar. Slow cooked at a low temp then seared and sauced. It’s been a St Louis staple for decades. Love your Mac n cheese though.

"Pork neck steaks" are not common in the US. Research says they're more common in Canada and Asian butchers. In the US, we normally get pork shoulder steaks, which may in fact be neck but rarely labeled as such, or pork chops (rib/loin cuts, like T-bone or Porterhouse cuts).
