I use a restaurant style blade. It is about 12 inches long and has a blade guard for storage in a drawer and a hole on one end to hang if you prefer that instead.

Not a senior (48 this month) but someone with joint pain in my hands, and carpal tunnel in both wrists I had an accident a couple of years ago and now I have a metal plate in my upper arm because I shattered going down a flight of stairs. I also have a son with high-functioning autism (13) and I always fear he won't pay attention and reach in the draw for something and cut himself. So the third one is for us hands down.
