Nice chopping blade, I am gearing up to make a short sword in the same stuff. You really shouldn't be sharpening to a burr. A burr is steel that collapsed under the pressure from the sharpening abrasive, and is by definition weakened metal. You can induce a burr with too much force on the edge when sharpening, but it can also be indicative of issues like overheating, poor heat treat etc. All of these things have been shown by lots of other people. The ideal sharpening process would be to shape the edge with a stone until it won’t reflect light, then refine with higher grits to achieve the grit finish you want. If the knife already had an edge but was used fairly heavily, it is almost always best to start with de-stressing, by cutting directly into the stone and removing fatigued metal at the edge. Sharpening on a burr, or on fatigued metal has been shown to reduce edge retention by a huge amount, 90% or more. Yes, really that much. I never did this before and I have noticed dramatically higher performance in my knives since I started.

@@the1stvendetta the only difference is these have never been sharpened. This is a first initial edge put on them when making a knife. The bur is essential for evenness and knowing your symmetrical.
