One thing that’s not crystal clear for me is the difference between gain adjustment like you do (on the track) and the trim level in the « utility » section. Any tip ?

As far as I know they are essentially the same thing. Just two ways of doing the same adjustment. I have always used Clip Gain to do this in Pro Tools and Logic, so it's just out of habit that I adjust the gain on the track instead of in the utility section.
