Steven Kaplan was my professor and mentor at Cornell in the mid-70s and launched me into my career. As a disciple of the Annales school of history his scholarship ranges far beyond bread, although bread, as a core component of the French and European diet even today, is central to all his work. And yes, his lectures and seminars are every bit as entertaining as this Conan segment, filled with metaphor, puns, and ribald imagery. He is brilliant if verbose.

If this isn’t one of the most impressive segments I’ve ever seen. The natural comedic talent of the bread guy, Conan’s ability to feed off of the bread guys jokes and energy, the way they compliment each other, and the fact this comes off as unscripted and completely genuine comedy. I wasn’t expecting this

As a French it was hard finding good bread that wasn't expensive when I was living abroad in America. Making bread is really an art, it take skills. You can really taste the difference like a good wine. Spitting the bread or getting his head in the bread was quite weird and funny tho.

This is one of the great interviews of Late Night. Everything about it was comedic gold. Possibly intentionally, but if so, they disguised their writing pretty gracefully, making it seem like the lines were naturally-delivered. But I think it was mostly unintentional, and Conan just happened to have a funny guest who knew _exactly_ what he was doing.

Big Daddy, I took a class with Steve Kaplan in 1982 and never forgot it: the first lecture was 45 minutes on the social significance of bread in French society and Catholicism before the French Revolution, and at the end he talked about Marie Antoinette’s “let them eat cake,” and why it would have been a big deal in 1789. Yes, he would throw in the sexual comments (not quite like here-he’s having fun), but then he would move to the insight of how a little thing like bread told you about a society and world.

From 7:52 you can see in Conan’s face as he realizes this is his Johnny Carson/Ed Ames tomahawk moment. He tries to play down his grin and waits for just the right amount of beats to deliver his retort.
