Perhaps I'm missing something here, but at 0:47-0:48, the attacker has an opportunity to immediately follow with a cross to the face after his jab (a vertical-punch cross, even) and stop-hit the defender with his punch before the neck grab can land.

Who can't find holes in any technique? The principal of controlling the openings remains unchanged. Furthermore, if he had thrown the backhand(L) the instructor is still in position to intercept it with the grabbing hand (R).
