I made a booking through their official app so I just waited for around 10 minutes. If you go without a booking, at Shibuya branch, I think it takes 60 to 90 minutes for your ticket to be called during the busy dinner time.

In these kaiten sushi places do they use mirin or normal sushi vinegar

I just called SUSHIRO and they said they don't use mirin for their rice, but the soy sauce they offer has slight alcohol in it. They also said that you can bring your own soy sauce for religious reasons. Hope this helps :)

I made a booking through the Sushiro official app. I visited there on Wednesday around 7:30pm. There are exceptions but the queue is usually shorter before the noon and between 2pm and 5pm :)

Yes it is common in Japan. As far as I remember, I've never been to a restaurant that charged me for green tea. But please note that some restaurants (especially izakaya) ask you to order at least one paid drink.

is the wasabi the real deal or the fake kind we have here in North America?

Most cheap or free wasabi consists of for example 10% real wasabi, 90% green colored horseradish, so I would say they are almost fake unfortunately. But I hear the wasabi at KURA consists of more real wasabi so it tastes better than the ones at SUSHIRO and HAMASUSHI.
